I know exactly what you mean Patchwork Cat. They used to sell tubs of a sandwich filling on our local market's cooked meats stall when I was a child. It was based on tinned red salmon and is very like what you get when you get one of the 'salmon and cucumber' sandwiches shop bought today.

I've never recreated either and I'd love to - it isn't just the taste, there is someting about the texture as well. I saw something similar in a market recently and was very excited but it wasn't the same - in fact it was horrid.

I adore tinned salmon, but only cold for some reason! I like tinned red salmon, mashed up with a bit of nice mayo and seasoning, on (cooled) toast or really, really crusty bread.

    Hi viv,

I use tinned salmon to make a salmon pie or for fishcakes. This thread should give you lots of ideas:

I'll add your thread to that one later to keep the suggestions together.

mix with some mash potato, dip in egg and bread crumbs and make fish cakes. or make a cheese sauce cook some white fish and use together for a fish pie topped with mash and bit of grated cheese. Cook pasta and a white sauce and instead of tuna pasta make salmon pasta. My mum loves tinned salmon with a jacket spud and salad with salad cream.

I'm not really clear on the distinction between pink and red salmon other than price. Can anyone please explain?

Goes nice with salad and pasta too. I add a little bit of Thousand Island Dressing when I'm feeling really decadent.

Last week I had a large tin of pink salmon to use up. I had a pre made shortcrust pastry case (given to me by my Mum) and did the following.

Flaked the drained salmon into the pastry case. I then put a few leaves of washed spinach over the top of this. I then mixed the following together :3 eggs with a small splash of milk, added some salt and pepper and also a handful of grated cheese. After mixing well I bunged the mixture on top of the salmon and spinach and baked in the oven (180C) for about 25 mins until golden brown.

    It tasted very nice too.:)
