    Oh yes Meritaten - perfect in every way - but must be wholmeal bread, pref Hovis ! :rotfl:And a nice cup of tea. And to top it all off - 'Sing Something Simple' on the radio.

    Ah, Mrs Chip, yes. And we could eat them off our Melamine plates, All different colours to show how trendy we are. And we could follow them with tinned peaches and Angel Delight.

    Having gone right off subject..... We like jacket pots with salmon mayonnaise, much classier than tuna. But if you don't like it you won't like it anyway so just give it to someone who does, preferably someone who could rarely afford such luxury.

  • Thanks guys, havent made fishcakes in ages so I am definitely going to give those a go. Thats something I hadnt thought of. I feel a bit guilty because the tins came from my husbands Gran and I think she saw tinned salmon as a bit of a luxury so I really feel like I should make use of it.

    Have just remembered that we used to have tinned fruit cocktail for pudding after the salmon sandwiches and I havent had that for years either. I feel a retro Sunday tea coming on!!!

    If your Gran gave you cheap pink salmon you may be pleasantly surprised by the red.

    Maybe just try a bit while you are cooking.

    or in my case - Sunday tea followed by bath and Sing Something Simple (by the black and white minstrels - On the radio, rofl, even at age 8 I wondered how people knew if they were black or white!) sorry I digress again! that was in the early sixties! I hated Sing Something Simple - as soon as that finished I was off to bed - under protest!

    were you given Tinned Fruit Cocktail after (with bread and butter for some reason) or was that reserved for when you had visitors?

    Hi YORKSHIRELASS,

    I use tinned salmon to make a salmon pie:

    I'm afraid quantities aren't exact as I it's something my Mum used to make and I never got the chance to ask her for the recipe so I just guesstimate.


    Blind baked (ie cooked without filling) short crust pastry in a large flan dish

    2x small tins of salmon
    one smallish onion
    grated cheese (as much as you want, but I like lots)
    2 small eggs
    a couple of tablespoons of double cream (not necessary but makes it richer)
    black pepper

    Combine the salmon, onion, cheese and egg with a wooden spoon and put the mixture into the blind baked pastry in the flan dish.

    Pop into the oven (180 degrees) until it begins to colour on top.

    Serve hot or leave to cool.

    wasn;t life simple before ready meals and frozen foods !
    we had "regular" meals roast on a Sunday leftovers on a Monday etc
    YORKSHIRELASS (I'm a yorkshirelass living in exile in Somerset for the last 40yrs :() I'd go with fish cakes I hate salmon but love the fishcakes,yoghurt not mayo ,hard boiled eggs and peas and spring onions.Homemade breadcrumbs yum

    I like salmon fishcakes too - and red salmon makes the best ones! just salmon, bit of leftover mash, salt and pepper and form them into patties. dip in flour, beaten egg and breadcrumbs and fry til golden. yummy!
