I love corned beef with chips, poached egg and sweetcorn and picallili, yum! Have read in one ofthe O/S posts you can freeze corned beef,so if you don't eat it all up in time,put in foil and pop in freezer. (haven't tried it myself tho, was going to but ate up all the corned beef............:o )0

My favourite way of eating corned beef is on top of a baked spud with cheese - yum! Very fattening tho.
Otherwise, it has to be white bread sarnie with English mustard.

Corned beef fritters are yummy, just make a nice thick batter with flour, egg & milk, dip slices of the meat in and shallow fry, great with mash & baked beans!0

corned beef risotto - my other fav meal ever
can get a little hot depending on how much curry paste you put in, but fry an onion, add a dollop of curry paste and some carrot if you want, chop up a tin of corned beef and add once the onion is browned. Meanwhile, boil up some rice, usually about enough for 4 people. You can add just about any veg to the mix, sweetcorn, peas, chopped peppers etc. (Broccoli and cauli don't really work), and simmer until the rice is ready. Then throw the rice in, stir and leave to cook through a wee bit. Then turn the heat off and leave it as long as possible. Why? To let all the juice soak into the rice. Corned Beef Hash
- 2-3 large baking sized (or 4-6 roasting size) potatoes
- 1-2 tins of corned beef (depending upon how much corned beef you like to eat!)
- 1 large onion
- small amount of oil
- pepper to season
- salt (optional)
Open the corned beef and cut large chunks, like the potatoes.
Finely chop the onion and brown in a pan with a little oil; add potatoes and brown
together for 5 minutes.
Add corned beef and season with pepper and a pinch of salt if required.
SERVE!
Corned Beef and Beanz Shepherd's Pie
1 tin corned beef
1 tin 300g baked beans
1 onion
150g cheese mashed potato
Preparation:
Crumble the corned beef into the bottom of a suitable bowl.
Dice the onion and mix with corned beef.
Add tin of beans and mix.
Slice the cheese and add it to the top of the mixture.
Spread on the mashed potato and cook at 200 deg c for 25 mins0 -
Sweat an onion, then add a tin of beans and half a tin of Corned Beef. Cook until its melted down, and serve on a jacket spud with a big dollop of Daddy's sauce.
My husband does the same, then pops some on toast, spinkles it with cheese before browning it under the grill.

Corned Beef Pasties.
Tatoes
Corned Beef
Big Onion Chopped
Seasoning
Pack frozen puff pastry
1 Egg beaten - for sealing and glazing
Boil some spuds and when nearly finished put come chopped onion in with the tatoes.
Drain when soft and mash together with some seasoning and a big knob of butter.
Open CB - chop up and mix in with the mash - leave to cool for 30 mins or so until cold.
Rol lthe puff pastry out thinly and using a large saucer or tea plate cut out some circles.
Spoon out mixture onto half side of the pastry but away from edges.
Use pastry brun and brsh around the edges orf the semi circle.
Score the same are with a fork and press two sides together - press down with the fork if you want to or crimp the edges.
Repeat with the others, glaze the tops of the pasties and pop in a medium oven until golden brown.
Serve with Branston sauce.
