Corned Beef Recipes

hi
mother-in-law insists on sending up food parcels, and something she regularly sends is a packet (large) of corned beef and no matter how often i try to tell her not to, she carries on, and no-one here will eat it..was wondering is there anyway i can do some sort of a corned beef hash with it-even just a small one for husband..would get another packet to make up the amounts if need be
any ideas..?

We rarely eat corned beef, but if we do its either in a sarnie:D ..or in a pie. This is what I do:
Boil up some spuds
Fry up some onions
Mash together
Cube (easier to mash) corned beef and add to mash above
Put in an oven proof dish and put a pastry top on
serve with veg...delish.

I do the above with corned beef but without the pastry. I put dollops of the potato/onion/corned beef mix in a roasting tin and place a knob of butter on top of each and then cook for about 20 minutes. Some people also cook chopped carrots until soft and mix this in too. I have a proper recipe for corned beef hash somewhere. I will look it out for you.0

i do an easy corned beef hash which is just mashed potato mixed with corned beef,in an oven dish and topped with grated cheese and sliced tomatoes
what about mini corned beef pasties ? my youngest doesnt like corned beef but he will eat it in a pasty lol0 -

I do a similar corned beef hash, but I fry the onions and corned beef together and then mash the corned beef mix with the potatoes. Put it under the grill to brown on the top. Delicious with tomato ketchup- real comfort food0 -
One meal we make with corned beef is curried spaghetti,it's a recipe that my dad produced in his naval days,it sounds disgusting but it tastes great
Put some spaghetti on to cook (however much you normally use)
Fry off a large sliced onion,add 2 tblsp of medium curry paste,then add a can of chopped up corned beef,not the low fat variety as it doesn't mulch downadd about 3 tbsp of tomato puree,1 tsp mixed spice and up to 1/2 pint of water,adding the water until the beef melts down and you get a nice sauce,take off the heat and add a beaten egg stirring quickly so as it doesn't go lumpy,then add the cooked spaghetti and mix all up,lovely!

i boil and chop potatoes into cubes, and then fry with some onions (like sauted pots) then add cubes of corned beef in nr the end to heat through very yummy!Member 1145 Sealed Pot Challenge No4

I do corn beef hash in the same way I'd do shepherds pie - fry onions/mushrooms/corned beef, add tinned tomatoes and herbs, and top with mash and cheese browned under the grill.The ability of skinny old ladies to carry huge loads is phenomenal. i do the cornbeef hash.. as mentioned above.. but any left over cooked veg i put in as well...and do a pasty pie...like an apple pie but with the cornbeef mix... and eat with baked beans.. or put a slice in hubby's lunc box...Work to live= not live to work0

Fry and onion and pepper, cube a tin of corned beef and add. Stir in a small tin of sweetcorn and a tin of beans in chilli sauce or baked beans with a dollop of brown sauce. Serve with rice and tortillas....it is not of more importance than daily life, which I have an enduring wish to make as useful and beautiful as possible.
