You can use corned beef in any recipe requiring mince - just remember corned beef is already cooked and just needs to be mashed up and added. The flavour will be slightly different, and you should taste before seasoning, but it means that a whole load of recipes are possible.0

The stuff lasts for months and months in the tins, so don't worry about stocking up. If you cut slices off as you need it, then cover the remainder with clingfilm on a plate and keep in the fridge, a standard sized chunk can be kept for a good four days. You must take the meat out of the tin to refrigerate or you might get food poisoning (this goes for all food - everything must be decanted from tins once opened). So a standard chunk will give you a good 2 - 3 portions over 4 days. Easy.0

Few options, one of the above mentioned or
Mixed with baked beans and topped with mash as a sort of sheperds pie
Slow cooker/Stock pot, corned beef, broth/soup mix (I always add extra pearl barley), carrots, peas and potatoes, cover with stock, cook for as long as possible, few hours at least, but don't allow to go dry, the broth mix will suck in the fluids so may need more stock if cooking on the hob, YUMMY, very filling and freezable, goes well with a chunk of bread or even dumplings. You can tell when I'm skint as there is less corned beef and much more veg and pulses, but I prefer it that way.One day I might be more organised...........

Occasionally we have corned beef as a main meal but love it in sarnies with pickle!
I normally boil some spuds and mash. Fry some onione and add to the mash then chop up a tin of corned beef and add to it till it all becomes like a brown mash. Then add a pastry top. Dont add salt though as sometimes depending on which corned beef you use it can be quite salty.

Corned Beef Toasties!
Do you have a breville lying doing nothing? I love these toasties...
Finely chop an onion and put it in a bowl, add some corned beef and mash it up, mix it with some tomato ketchup and use as a toastie filling - Yum!:D

Making me feel hungry reading this thread.
I like to boil some potatoes and mash with the corned beef. Lightly fry onions, garlic, mushroom and peppers and mix through, place in casserole dish - top with grated cheese and a sprinkle of cayenne and put in the oven to heat thru and melt the cheese. Yummy0 -
I love it if I put the tin in the fridge for an hour or so before opening it, then I open it, slice it and have it with chips and coleslaw.Jane
