    You can grate courgettes in a salad with grated carrot, maybe some onion and a dressing. You can also grate them into a pasta sauce where they all but disappear. They have a very mild flavour so will go in most soups and stews for extra bulk and vitamins, as someone has already mentioned they are great grilled too as are aubergines if you are also giving them a try. You can just boil them and serve as a vegetable (they are baby marrows) but thy're wasted like that really.

    Quarter them lengthwise, brush with oil, then stir in a quartered onion, perhaps a tomato in chunks, and a little garlic. Herbs if you want (thyme or oregano are good) Top with breadcrumbs and a little cheese. Bake - yummy.

    Google "Courgette Cake". I made some courgette cakes last year and the kids didn't know they were eating veg!
  • Slice and fry in a little oil with garlic until soft. Or slice in batons, dip in beaten egg, then stuffing mix and fry gently until golden.

    I used 3 courgettes today to make a yummy veg curry for dinner tonight, just fry some onion and garlic til soft, add a tablespoon or so of curry powder, chuck in whatever veg you want ( I used 1 squash, 3 courgettes, a red pepper) add some stock, 2 tins of chopped tomatoes and season. Simmer for 45 mins and then voila, yummy curry :). Serve with rice, bread or whatever you fancy. Lasts for days so I stick leftovers in the fridge and eat it for lunch :drool:

    I think Rose Elliott has a "Courgette Cake" recipe in one of her books but it isn't a real cake. It's sliced and baked couregettes in an egg and milk mixture like a savoury custard with browned, chopped onions in. It's bit bland but the accompanying tomato sauce with chopped capers makes a world of difference, especially if you perk it up with some chilli. I can't think of one good reason why some of the "Delia's Cheat" smoked paprika wouldn't make it tasty as well. I must try that some time now I've thought of it....

    Fritata, cheap quick easy and delicious!!

    I normally cut into circles and fry off slightly before adding any other bits and pieces hanging around in the fridge, normally tomatoes cheese and a bit of ham :D

    They are good as a substitute for cabbage in a coleslaw. During glut season I chop em up and add to salads raw

    Baked in the oven (or griddled if oven not on for other stuff) with a little sesame oil as a veg

    As an ingredient for frittata, pasta dishes, tomato based veg stew, filler for spag bol etc (blitzed to hide if appropriate:D)

    As a main dish with chick peas/beans and tomatoes with a gratin top
