    (The 'ribbons' are achieved by simply using a peeler along the length of the courgette. Gives a nice wide but thin 'ribbon')
    This sounds nice. Years ago my Mum used to buy little plastic basins with grated courgettes, then carrots and layers of other veg. It just hd butter on top and was microwaved. I might try to make a homemade version.

    My bf's Mum came round with a bag of veg from her next door neighbour's garden. She knows I'll eat and use up anything and turned her nose up at it.
    There are lovely runner beans and tomatoes but there are these marrow looking things. She said they were courgettes but they are unlike any courgettes I have seen. I'm happy to use them but what do I do with them? They are like big, rounder (rather than cucumber shape) pale courgettes. Any ideas??

    They are courgettes - round ones! use them as you would a normal courgette.

  • You can get courgettes in all colours, shapes, sizes. I've just chopped a huge one for a soup. Nom.

    Oh dear I am obviously such a towny!! Do you keep it chunky in a soup or blend it?

    Courgettes can come in all shapes and colours so don't worry. I prefer them chunky in soups but you can blend them as well.

    They'll be Tondo do pizencia courgettes. They're supposed to be round and pale green. Just treat trhem like any other courgette.
