    I've been Money Tipped!
    I often make a chocolate cake with courgettes. This is the recipe I always use, but I generally skip the walnuts and do it as a cake. As a bonus, it's egg and dairy free.

    My allotment is also full of courgettes. Yesterday I used one (diced) in shepherd's pie. Tomorrow I'm going to make a quiche.

    I have haversted some from a plant in the garden, and only yesterday managed to make something with one! I sliced them up about half a cm thick. In a bowl I mixed a spoonful of flour, paprika, salt and pepper and chilli flakes. I shook the courgette slices about in it to coat them, then shallow fried for a few mins each side until crispy. My OH really enjoyed them, I realised I'm just not keen on the taste of courgettes. They could be sprayed with oil and baked too probably.

    after trying probably hundreds of ways to cook courgettes that my family might finally like..I discovered that they are much much more popular raw...
    so now we have them grated into chopped salads - or thinly sliced like cucumber
    mixed into hm coleslaw
    Peeled into strips for a moist linguini type salad or
    Shredded into a spaghetti - with one of those mandolin type peelers

    they makes a great bland base to salads without being b****y lettuce
    and I thought I'd tried everything..who knew !

    I use courgettes as a substitute for pasta, as ribbon slices with bolognaise, thicker slices in lasagna. I also use them as pizza bases, slice length ways and top with passata, cheese, mushrooms, salami and bake as you would a pizza, or make mini pizzas topped with pepperoni. My favourite has to be parmesan courgette crisps, thinly slice the courgette, dip in whisked egg and then coat with grated parmesan and bake till crisp.

    Courgette fritters go down well in this house and can be frozen. I've found that people who say they don't like courgettes will eat them cooked in this way.

    100g (3.5 oz) plain or gram flour which gives a nutty taste
    2 tsp paprika
    Half tsp cayenne pepper
    Pinch salt
    3 or 4 chopped spring onions
    450g (1 lb) courgette grated
    2 eggs
    50g (1.75 oz) grated Parmesan cheese (cheddar will substitute)
    Vegetable oil

    1. Mix flour in bowl with paprika,pepper & salt. Add courgette, eggs, Parmesan and mix together.
    2 heat a little oil in frying pan. When hot add walnut sized spoonfuls of fritter mixture. Fry 2 mins each side until golden, flattening them slightly,
    3. Lift & drain on kitchen paper.
    Can be boxed up and frozen once cooked.
