I tend to use courgettes as part of a pasta bake, slice them, cook them in pan with garlic and any other veg you care to throw in and serve with cooked pasta, bacon (cooked of course
) and creme fraiche for a quick easy supper. Or you could add thickly chopped onion, cherry tomatoes, garlic and roast them in the oven a la Mediterrenean style.

The best way to use up courgettes is in a loaf. Absolutely delicious toasted with butter, but good on it's own as well.
400g plain flour
1/2 tsp salt
1 tsp bicarb
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
300 g sugar
100g demarara sugar
3 eggs
200ml sunflower oil
2tsp vanilla essence
380g grated courgette
75g walnuts
2 loaf tins
Set oven to gas mark 2.
Mix all dried ingredients, except walnuts, together
Beat eggs and add oil and vanilla. Add to dry mixture along with courgette and stir. Add walnuts and put in tins.
Bake for 1-1.5 hours and then wait for people to eat it all up.

You could basically chop them up and add them to almost anything you add veg to - spag bol, lasagna, chili, anything like that. I chop them up and steam them with other veg to add to a meal. And often will chop them up raw and add them to a garden salad. Yummmmmm You can also make a loaf cake/bread with them much like pumpkin bread - it's very good - we've had this a lot! Last year I grated them into a batter and made some lovely juicy fritters. Of course, you can slice them thinly with a peeler and have them raw - make a dressing including mint and lemon (either oil based or maybe with some yoghurt).0

Hello all,
OH was at our allotment yesterday, and was talking to someone else about the produce etc.
They happened to chat about courgettes and their many uses.
Perhaps you could have a look at the following and give me some pointers, this is what OH remembers.
Fry onions and garlic - obvious that one, then slice cougettes and cook these with the onions and garlic. Now half an oxo cub comes into play. He's not sure whether it is disolved in water or crumbled over mix.
Then transfer to oven proof dish with grated cheese over.
What do you all think. Have I missed anything or could anyone add anything.

I would think that it is crumbled as the bake would be too wet if you dissolved it.
I would try maybe grating the courgette?
A colleague of mine was telling me about that she does with courgettes which is similar to dauphinois potatoes.
Layer slices of courgette alternatively with onion, throw on a pot of double cream, top with cheese and bake...Man plans and God laughs...Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.0 -
Personally I would use a couple of tomatoes or a bit of tomato puree mixed with a little water and some herbs (oregano is good with curcubits) instead of the stock cube.
Alternatively, cut into quarters length-wise (half for skinny ones), mix with a little lightly fried onion and toss in some squashed garlic and herbs. You could add a tomato or two, a few mangetout or french beans if you want, drizzle with oil, add a mix of fresh bread crumbs and cheese if you have it. bake
You do not need a lot of breadcrumbs, the aim is not a full layer of crumble, just something to add a bit of crunch to contrast with the roasted veggies.If you've have not made a mistake, you've made nothing0 -
