Just back from a road trip and have been given 3 largish courgettes from a friends allotment
Don't have any fresh toms or aubergines and don't want to go buying a lot
So 3 large courgettes, a whole host of spices and herbs, basics such as eggs etc
Suggestions please.0 -
You can just do them as roast veggies?
Or saute? Frittata?
If they are not too large (seeds not developed) slice with a mandolin and make a dressing with orange zest, juice and oil and add chopped mint,If you've have not made a mistake, you've made nothing0 -
I would second frittata, courgette and feta a fav here. Or slice them VERY fine, sprinkle with smoked paprika and deep fry till the bubbles are tiny - courgette crisps - yummy....Note to self - STOP SPENDING MONEY !!

Dice them up into 1/2" cubes, salt them in a colander for an hour or so, rinse tham and dry them on paper towel then heat your oven to about 200F drizzle the cubes of courgette with some olive oil, sprinkle them with dried oregano and garlic powder, give them a really good grinding of black pepper and oven cook them until they are softened and beginning to brown round the edges. It's nice hot as a veg and also nice cold with a lemon juice dressing as a salad. It saves many outsized courgettes being dumped on the compost heap in our house.0

I slice them into thin "sheets" and use as substitute for lasagna sheets.

Grate, mix with an egg and a tablespoon of flour and fry in little fritters. Gorgeous with some cheese mixed in as well. We make no-carbonara with ribbons of courgette instead of pasta.
