    Are they easy to grow ? Need a lot of sun ?

    Very easy to grow, even up here Mard. Grow half as many as you think you'll need, and it will still be twice as much ;)

    They're a Medveg so I presume they'll need some.

    Why not order a couple of those nice, shiny purple things and then made ratatouille?

    Hi mardatha,

    I use them mainly in minestrone soup, added to casseroles and when making oven roasted veg (courgettes, red onion, mushrooms, peppers, cherry tomatoes and garlic all drizzled with a little olive oil and roasted on a high heat). They're lovely raw too, diced into a salad.

    Last year I planted 2 plants in the old tyres OH scrounged, worked great for courgettes as you could walk right round the plants and find the mystery marrow that appeared over night. We had just the right amount off the 2 plants for the 4 of us. Still planted 2 this time cos I will give Ds half, but that was before I discovered the other use of them thanks to nopot2pin - off to plant a few more seeds:rotfl:

    I am not doing well this year as had wedding at the start of the year and now am pregnant so have been quite ill so menu planning gone out of the window. Just need to get back on track. Dh did a shop whilst I did one online so now have quite a few courgettes. Have stuffed them but looking for some more ideas. I am slightly limited as cannot lift my slow cooker or any heavy pans.
    Have managed to sign up for some of the baby freebies whilst I have been on bed rest. Has been an expensive month as quite a few takeaways and taxis to hospital as unable to drive and too far by public transport.

    A tasty way to eat courgettes is to halve them lenghways and spread mustard on cut side and then grill.
    Also can use them in pasta sauce which is quick and easy.
