    Nice and light... clearly the cake is just a foil for cream cheese frosting but one must make sacrifices.....

    Slice them lengthways, saute gently then use a layer in a lasagne. Add another chopped courgette to the tomato sauce too.
    Hoping this year is better than the last. :)
  • i bought a v slicer and when testing it i discovered they are scrummy raw !!
    i put them on a salsd with raw cabbabge and carrot x

    i can't remember which edition it was in, but in one of my easy cooks mag a while back there was alot of courgette recipes. i did a quick search on easy cook website and heres a list of a few you migh tbe interested.

    You can freeze courgettes too, I'm in same position as you, got glut at home and also heaps at work so no one there wants them. I slice, cook in boilign water for 3 mins, plunge into cold water for few mins, drain well and then open tray (well, two big Tupperware lids actually!) freeze them. Once they're frozen, couple of hours, I bung them into another Tupperware container in the freezer. Used some last night with pasta and cheese sauce. They're ok like that, means I have stock of them throughout winter for lasagnas, casseroles, pastas, chillis etc. Do same with runner beans and green beans as always do well with those in the garden and at this time of year I don't always want to be racing in from work and starting to do massive cook up. The harvesting, blanching, freezing routine suits me much better.

    I did have a clipping from a newspaper of a courgette cake! Sounds awful but I expect it'll taste reallly similar to carrot cake!!!!

    You could always make mousakka with courgettes instead of aubergine. Or i'm sure there's a few recipes for curried courgette.

    I've just made a choc courgette cake I liked it but loads of people loved it - a normal sponge cake with courgette & yogurt added.

    I also did a ratatouille swapping courgettes for aubergines.
    Can also be roasted along with peppers and sweet potatoes with herbs or spices to your taste.

    We had a glut last year as well, (yes I do mean last year, we didn't grow any this year as we still had rather alot in the freezer) :D

    I do a mushroom and courgette lasagna, just cook the mushrooms with onion first as you normally would do for mince.

    Turns out very well.

    i bought a cheap bag of courgettes. i've searched but not found any recipies for a glut. i've had them as a side, made 'courgette wheels'* and will add them to stirfry, but what can i do with them? can i freeze them in chunks?

    (humm, noticing a theme here, this is at least my 4th 'help, too much of something' thread! yes, i like the theme so i've gone for bad grammar in the title to preserve it!)

    *courgette wheels: slice quite thin, put into seasoned plain flour, dip into beaten egg with a table spoon of milk and fry about 2 mins on each side till crispy, but not black! serve with salsa or ketchup or tai sweet chilli sauce. 1 egg is enough for 2 standard courgettes... any left over egg can just be poured around the last batch.
