There are several recipes in the Grocery Challenge index - this is the one I'll be trying over the next couple of days.
My favourite way to eat them is dead simple though - heat up some oil in a frying pan; slice an onion into it; crush a clove of garlic on the top of that; slice the courgettes very thinly (with a mandolin is best), add to the pan, stir around, turn the heat down and cook slowly for 25-30 min, stirring frequently. Season with salt nd pepper, serve with pasta.0 -
I did have a clipping from a newspaper of a courgette cake! Sounds awful but I expect it'll taste reallly similar to carrot cake!!!!
You could always make mousakka with courgettes instead of aubergine. Or i'm sure there's a few recipes for curried courgette.0 -

I've been in this situation recently and i have added them to my bolognese, ommelette's and i have also fried mine with some red onion and mushrooms and popped it all on top of a pitta bread, topped with a bot of grated cheese, pop it under the grill for 5 mins and you have a very cheap and quick pitta pizza, but next on my list to try with them is courgette fritters with a yogurt dressing.:j:j:j0

Courgette & tomato soup is lovely and very simple to make - onion, garlic, oil, stock, courgettes, tomato puree and seasoning.
Courgettes can also be grated to add them to salads.0 -
My stepmother made this and it looked odd but tasted fab!
She lightly sauted onions, mushrooms, peppers and courgettes in a pan with butter; then poured over omelette mix (eggs, salt, pepper & splash of milk) and bunged it in the oven to set. Absolutely delicious hot or cold!0 -

I can vouch for the courgette cake. We tried it with much trepidation when we had a glut of courgettes from our allotment and it was really good - lovely and moist (although I must admit we did peel ours as I thought the peel would have the most "savoury" flavour). Just substitute grated courgette for all or part of the grated carrots in any carrot cake recipe.
We also add grated courgette to mince for shepherds pie/lasagne/spagbol along with grated carrot to sneak veggies into the kids.
Oven roasted veggies including courgettes are also a fave in our house.0 -
