    They are also one of those veggies that can be grated up and added to sauces so that they almost disappear so perfect for fussy eaters. But great in any stews, casseroles, or roasted dishes.
    Just don't do what my mates OH did. He came home from work and told her never to buy those horrid cucumbers again as they made his tuna majo butties taste horrible and were hard as well. Yes you guessed it he cut up a courgette by mistake for his butties men eh lol.

    Actually courgettes CAN be substituted for cumcumbers in sandwiches but the trick is to use small young ones and slice them thinly. They make the bread less soggy than cucumbers and some people find them less "burpy"..
    Very young small courgettes are delicious eaten raw mixed in with a sliced tomato salad, a little chopped red onion and a vinaigrette dressing. There's certainly no need to peel them. Tiny courgettes are also nice raw, sliced lengthwise in strips, along with celery, carrots, and red peppers and used in savoury dips. I reckon that any courgette longer than four inches is probably overgrown and not worth eating, which is why I prefer to grow my own.

    Certainly agree with all previous ways of using them. Also good, washed, sliced (in rings like with carrots) and then sauteed in a little butter with a sprinkilng of mixed herbs. It's good with any sort of 'non-gravy' meal like fish or gammon.

    I like grilled or roasted sliced courgettes with onion peppers tomatoes and garlic, cold as a salad with feta and/or couscous. I bought three packets yesterday at Aldi, I also grate them into spag bol, chillis, curries etc.

    my favourite way to cook courgettes is to use a vegetable peeler to make very thin long slices. I then toss through salt & pepper & microwave for a few minutes on high until soft. I then stir through a knob of butter. lovely!

    Cut courgettes in half (lengthways) scrape out, mix with rice and veg or add some minced meat and then bake in oven. I'm sure this will be on the link Pink-Winged added. You can make a courgette frittata (just google) which is really tasty. Or make a veggie lasagne or add to moussaka instead of aubergine. Apparently you can make cake as well (similar to carrot cake). Just google courgette recipes and loads appear.

    I like to slice very thinly (with a mandolin if poss) and chuck them into a small omeltte pan with thinly sliced onion,mushrooms peppers and a dollop of lazy garlic and a good grating of black pepper and some sea salt, and fry very gently until just soft.I pile this on top of any steak which I also cook very gently after giving it a good wallop with my steak hammer This I serve on crisp iceberg chopped lettuce and tiny sliced cherry tomato's.Mmm I haven't had that for ages I shall get some courgettes next week in Aldi's. Does anyone know if you can freeze them ?

    My courgette hating DS loves chocolate courgette cake. The courgettes make the cake lovely and moist.
