    I've been doing a nice Jamie Oliver recipe -

    Cut courgettes lengthways into four quarters, cut out the softer centre part so you are left with just the firm skin, then cut them into small 'strips' on the diagonal so that they look a bit like penne pasta.

    Boil some penne pasta and while it is cooking, fry some bacon strips/pieces in their own fat, add the cut courgettes and some fresh thyme and pepper, saute all together.

    Make a sauce of: 1 egg yolk per person, 25ml cream per person, handful parmesan - all whisked together.

    Drain penne and add to cooked bacon/courgette/thyme, stir round, save a bit of the pasta water if you think you will need to make the sauce a bit wetter (I just use extra cream!! :D ), let it cool slightly then add the sauce, stir round a bit to cook the yolk through and serve.

    Really easy and super scrummy!!

  • We had courgette, pea and mint soup when we went to a friend's for dinner recently - I don't even like courgettes, but it was blimmin' lovely :D
    Here's the recipe.
  • I used up the last of my home grown courgettes couple of weeks ago on cheese and courgette quickbread. Just googled courgettes and cheese and got the recipe from a site on there that specialised in quickbreads (no yeast needed). Was fab easy recipe to make, took only a few mins and the result was gorgeous. had it with pasta, froze some and had that with soup one day, pizza the next (toasted the one with pizza). Will def recommend these quickbreads, will be trying this courgette and cheese one with onion and cheese next week.

    I also sauteed some courgettes and froze them in handfull sized portions. I just add them (frozen) to pasta sauces when I'm making, they're so full of water they defrost and cook at the same time!

    I am appealing to your great knowledge of recipes and cooking as I have made rather a large boob.

    I have just had my shopping delivered (kids, no car, shop miles away - detest paying £3.50 but needs must) and when unpacking I found I had ordered a rather large bag of courgettes.. 12 to be precise :eek: What could I do with them all? 1 is ear market for roast med vegetables but 11 with no ideas of what to do.:confused:

    If you can't use them all now you can freeze them but they do go a bit mushy once defrosted so they're best used in stews and casseroles. This thread has lots of ideas that should help:

    Ratatouille - dead simple to make in slow cooker.
    Soup - either courgette soup or use to bulk out other ingredients - it's nice blended into Broccoli & Stilton soup, or diced in Minestrone, for instance.
    Saute in garlic butter & serve as a side vegetable.

  • If you whip up a big batch of ratatouille there's loads of stuff you can do with it
    On its own - as a side salad or jacket potato filler
    Vegetable Lasagne
    Vegetable Pasta bake (pretty much same as lasagne but with pasta shapes instead of lasagne sheets)
    Stuffed peppers - you need 1/2 a red pepper per person + ratatouille, take a pepper chop it in half and scoop out seeds, mix ratatouille with some cooked rice, stuff pepper halves with ratatouille+rice mix top with wholemeal breadcrumbs and sprinkle over some cheese pop in oven for approx 20mins, serve with jacket potatoes and/or side salad
