rigs they can be frozen, I have got a few plants although not as many as you lol with the intention of freezing for the winter months.
Chop them and freeze them on a tray with them not touching then group them in little bags in whatever quantity will work for you.I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off

Just thought I'd share this wonderful recipe my aunt makes...
Be sure to use basmati rice as it gives a wonderful flavor. Emmenthal/gruyere will work much better than cheddar.
800g courgette, coarsely grated
3 onions, chopped
1TB olive oil
1/2 cup basmati rice (my aunt just throws in a small handful - I'm guessing this is about 1/2c)
3 eggs, beaten
1/3 cup grated emmenthal or gruyere (again aunt just chucks in a handful)
9in unbaked pastry crust
Fry the courgette and onions in the oil over gentle heat until the courgettes are no longer watery.
Remove from the heat.
Stir in the basmati rice and allow to cool.
Stir in the eggs and emmenthal/gruyere.
Pour mixture into a 9in unbaked pastry crust.
Bake at 200C for 30min.
Wonderful when eaten either warm or cold.
Result!! I left this recipe in the kitchen and came in tonight to find OH had adapted it a bit - he made the filling, but added some of our home grown spinach as well (miked and then squeezed dry first). He then wrapped it all in a couple of sheets of filo pastry, like a parcel and baked it as your recipe said. It was yummy. npsmama - thanks for this recipe. Our courgettes are now coming thick and fast so this will be another good way of using them, especially if I can remember to cook some extra rice the previous day. I usually keep a couple of those pre-baked flan pastry cases in the storecupboard for producing quick meals, so this was a doubly useful recipe for me. . (Yes, I know making my own pastry cases would be cheaper but sometimes I'm prepared to sacrifice a few extra pence for the sake of convenience).0

well as the title says i am overrun with courgettes!!! and i mean millions just yesterday we bought back an ikea bag full!!!!
we've had fritters,the courgette pie from here,courgette curry,stuffed courgette,roasted,soups,grated into spag bol.
are then any more idea lurking out there so i dont waste these? do they freeze?? im guessing not because high water content but thought id check. can you make a chutney with them??
