    Hi, Yes you can freeze them fine. When they defrost, the appear to be rather soggy, but they arn't when you come to eat them.

    I don't know if this appeals but I make Courgette and Mushroom Pizza's but use naan bread as the base. The flavoured naans give a nice taste to the base.

    I saw the idea in a Nigella book.
  • Courgette cake - very good and you can't really taste the Courgette its just very moist and Yummy.

    Courgettes and tomato side dish for me.
    Slice courgettes not too thin, fry them in olive oil on a medium heat until a bit soft, along with a sliced onion. Add a tin of chopped tomatoes, reduce heat, cover and cook until the sauce had reduced a bit. I add oregano and garlic to my sauce as well as salt and pepper. You can add tsp of sugar if you don't like the "tangyness" of tomatoes. Voila!

    courgette fritters - make a thick batter and add gated cougette, cumin and chilli, fab as as veggie main course or make them smaller adn serve with a tomato chilli relish for starters or lunch.

    Courgette and ham omlette, courgette and red onion frittata.

    They make a love veg side dish roasted with olive oil and thyme.

    Stuffed like a marrow but mini.

    There's loads more but that should get you started.Can you tell we had a lot of courgettes this summer?

    we always make zucchini bread (courgette cake) with ours, you could also make carb free spaghetti fromm it, or add to stirfrys, soup.......the list is endless

    Just got a courgette curry out the freezer we made in the summer when we had a glut.

    good and ideal for this weather, so warming.

    We grew courgettes this year and had a great crop. I've frozen the surplus cut into slices and I just add a handful to any casseroles, bolognese, chilli etc I'd just use them up like this over time. I decided to do this when I paid £1 for a single courgette last winter.
  • Would love courgette cake/zuchini bread recipe please, i lost my old recipe and the one I found online was very different - LOL
