Tonight I'm going to parboil the courgettes, they are small, so I'll cut them in half longways. Drain and put into the bottom of a dish. Cover with cheese sauce and sprinkle with cheese, cook for 20 mins in the oven. I'm going to do jackets started in the microwave to have with it. I am going to do runner beans as well.0

My mum makes a stunning courgette quiche...using grated courgettes... a dish we first had in Kefalonia, and good old mum sat at the table disecting it so she could recreate it..
If anyone wants the recipe , let me know and i will get the recipe when i phone tommorrow-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
Im on a diet and courgettes are one of the few veg I can have- Ive taken to cutting them into "chip" shapes and grilling them in a griddle pan. Lovely and crispy they go- really nice.
but you cant beat them sliced, dipped in batter and deep fried ( another greek thing!) guess thats why Im on a diet :rolleyes::beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

To follow on from the lasagne idea, I saw Gary Rhodes use a mandoline (no, not the stringed instrument) to slice a courgette into "spaghetti". He then basically blanched it and used it as a low calorie version of real spaghetti. I've tried it in a carbonara and it was great. Mine wasn't as effective as his becuase I sliced it using a knife (not a mandoline owner sadly) but the result was still good.My eyes! The goggles do nothing!0

i really dont like courgettes much.
either thinly sliced and griddled or in soup.
my fave soup is
courgettes sliced
white onion
fresh thyme
chicken/veg stock
butter
parmesan
sweat the onions and thyme leaves(no stalk!)in the butter,add the courgettes and sweat down & season,add the parmesan and hot stock(never cold) and cook until the courgettes are just cooked.
liquidies straight away.
season and add more parmesan to taste if needed
gives you a light and bright green soup0 -
I've got 3 courgettes left over from a pasta dish. Does anyone have any easy ideas of what meals i could make from them? Thanks0

They are good oven roasted with a little garlic or fried in butter
Or chopped up really finely in with spag bol / chilli.
As part of minestrone style soup - lots of veggies, tin tomatoes, tin beans (baked beans fine or just beans) chicken/ham stock and herbs. Throw in broken up spaggetti on the last 12/15mins of cooking. Chuck on a little grated cheese to serve. Really easy and tastes scrummy.
Thinly sliced onto pizza.
My SM made the most gorgeous chocolate cake which had a grated courgette in it - it was the nicest I have ever tasted but as yet don't have the recipe sorry. You might be able to find it online tho ?0 -
I slice them in half lengthways and widthways.. cut crisscross through the inside.. paint with olive oil sprinkle with black pepper and roast... they take about 15 minutes at 180'C
slice and boil for a few minutes..
dice and chuck in stews.
I have one which I am going to slice thinly and add to my potato bake later.
I grate it into savoury mince or bolognese sauce.. the chillies can't pick it out then.. and neither can I!!
