    Wow, there's some great ideas. Hoping my courgettes do really well this year, so I'll need them all :D

    A few of my recipesoff the top of my head-

    Chop courgette and fry gently in good amount of olive oil with chopped garlic and red chilli (dried flakes are fine) to taste. Stop before the garlic gets too brown and bitter.
    Mix with hot cooked spaghetti or other pasta.


    Grate or finely chop courgettes. Sweat very gently in a covered pan until soft and lots of liquid. Season with salt, pepper and nutmeg. Puree and serve- the best courgette soup ever! It tastes as though it has cream in it, and even DH likes it and courgettes are not his favourite vegetable ;)

    Use instead of marrow in marrow and ginger jam and marrow and pineapple jam. (Both are much nicer than they sound!!) Especially good for the monster courgettes that got missed.

    courgette and mussel pasta with mushroom.
    pan fry courgettes until soft, drop in mushroom until cooked, defrost mussels in the vegetables until warmed through. stir through pasta with lots of olive oil.

    courgette and carrot rosti
    grate equal amounts of courgette and carrots. Press through a fine muslin cloth. Pick up handfuls, shape and pan fry until cooked. Use the juices to add to soups/stocks etc.

    Courgette and aubergine layers.
    slice up courgette and aubergine long, roast in hot oven 10-15 minutes (depending on thickness). Layer with mince, tomatoes and cover with bechemel/white/cheese sauce. Cook until sauce bubbles. Layer with potatoes for an extra filling meal.

    courgette dip.
    roast courgettes with garlic. Whizz with herbs and cream cheese. eat with lots and lots of (value!) tortilla chips.

    edit: sorry the recipes aren't very exact. It's mostly guesswork when I cook. :o

    This Jamie Oliver recipe ( You may have seen it on the Sainsbury's Feed Your Family For A Fiver ads ) is gorgeous :drool:

    Brilliant Bacon Pasta

    Ingredients - 275g smoked streaky bacon , 2 courgettes , garlic bulb , 40g English medium mature Cheddar , 200ml creme fraiche , 500g pasta shapes.

    1. Boil a large pan of salted water and cook 400g pasta shapes , following pack instructions.
    2. Slice 250g dry-cured smoked streaky bacon and fry in a large pan until golden brown , adding 2 cloves of finely sliced garlic for the last minute or so.
    3. Slice 250g courgettes lengthways into quarters and cut into chunks. Add to the frying pan and cook for a couple of minutes with the bacon and garlic until they are slightly softened.
    4. Once the pasta is cooked , drain in a colander , then put back in the pan. Add about half a tub of creme fraiche , some freshly ground black pepper and a hanfdful of grated Cheddar. Mix together.
    5. Gently fold the bacon and courgette into the pasta and grate the remaining cheese on top,

    shred the courgettes and dab with teatowl to remove excess water chop some fresh herbs onions a bit of garlic beat a egg and about a cup full plain flour add alltogetr and shallow fry , Makes lovely friters

    Slice and drop into batter then deep fry :D serve with a dip, like Tzatziki, they serve this a lot in greece and its one of my faves :D

    Also slice and add to stirfrys, and veggie lasagnes.

    Grill them in marinated strips on the BBQ - yum

    Slice and have on kebabs

    If your folks have any flowers, I believe that they can be stuffed - very seasonal dish, they look fab but Ive never had enough success with my courges to get the flowers :(

    Hi there

    I tried this and it is stunning...anyone liking carrot/passion cake should love this

    COURGETTE TEA BREAD
    pre-heat oven to 180c/350f/gas 4
    grease a 2lb loaf tin and bottom line with greaseproof paper - make it so it comes up the narrow edges so you can use it to lift it out ;)
    1. 1 large egg
    2. 125ml sunflower oil
    3. 175g courgettes -trimmed and grated (on large holes)
    4. 150g wholewheat flour -i used ordinary
    5. 1/2tsp baking powder
    6. 1tsp bicarb
    7. 1tsp ground cinnamon
    8. 175g soft dark brown sugar
    9. 75g sultanas
    10. 3oz walnuts chopped
    • tip courgettes and all dry ingredients into a large bowl and mix well
    • whisk egg into the oil and pour into dry goods
    • mix to a thick batter and pour in tin
    • shove in oven for about 1 hr or until a skewer comes out clean..cool in tin for 10 mins before turning out to cool
    How is THAT for a method? :j ...chuck it in, stir it round..job done :D
    when cutting you will need a really sharp knife as its lovely n sticky and This will keep in a tin for 1 week.... or can be frozen.
    i made 38 mini muffins and they took about 15 mins a batch and if you let them stand for a few seconds in the tin they firm up and are easier to remove :D

  • I love then sliced, chucked in the griddle pan with a bit of oil, then fried till they brown. I sometimes eat them like this, as a veg, or add garlic or onion and tomato, and eat with rice or crusty bread. lovely!
