Thanks pink and those who replied. I'll have a look through with my cuppa later. Still not really used to this cooking business! Last night's dinner was nice but i spoiled the sauce - will try it again though as it was (nearly) nice. Pasta, courgettes, lemon, basil and mascarpone.

After a quick search (and not finding anything so apologies if there is already a similar thread!), I thought it might be a good idea to have a thread for courgette recipies.
I know a lot of us are growing our own and as courgettes produce so much 'fruit' I thought we could all share what we do with them.
Tonight we've just made some courgette bhaji's and I have to say (cooks perogative (sp?) to taste before dinner is ready) they are absolutely delicious ! Really brings out the sweetness and will go perfect with our curry that is cooking at the mo ....
So over to you guys .... will post our bhaji recipe after dinner ...... looking forward to hearing what you all do with yours !:jWeight loss to date 1st 11.5lb :j0 -
-grate into casseroles
-cook in a cheese sauce and serve with pasta
- grill/fry in olive oil and serve with grilled/fried halloumi cheese and bulgar wheat (serve with yoghurt)
- fry an onion in a saucepan, add a cupful of rice and any leftovers (chicken casserole is particularly nice) add 2 cupfuls boiling water, tomato puree and herbs, chopped carrot and celery, cook for 20 mins, serve with spicy sauce.

I have grown some courgettes in grobags this year and have LOADS of them, which is great cos they do cost a bomb but I am sick of eating ratatouille can anyone give me any inspiration for some cheap meals I can use them up in?Aug GC £63.23/£200, Total Savings £00 -

Risotto with courgettes is delicious!
If not I usually fry them in the pan with a bit of extra-virgin olive oil, onions, a handful of chopped cherry tomatoes and parsley. Season and cook until tender. :beer:
You can also slice them up and add them to your salad!0 -

Hi - here's one I got from Hugh Fernley Whittingstall's
River Cottage Cookbook - serves 4.
1 kg courgettes finely sliced - fry in olive oil till soft, browned & just beginning to break up.
Now stir in a couple of tbs cream ( I use creme fraich as I prefer it & you can get a low fat version which helps!!) & about 50 - 100gms of grated Pamesan.
Allow to bubble for just a moment till it's all incorporated, then serve with pasta.
Delicious! Enjoy.
