if I have a couple of spare courgetts I make courgette and pea soup with them. Infact im making it for lunch today!
chopped onion
courgette
potato
peas
stock
cook the onion till soft, add the courgette, potato and stock. Simmer for about 10 mins, add the peas, simmer for another 5 mins then blitz

We're having pasta sauce for tea - lightly fry onion and garlic. Add grated courgette and cook until soft, and most of the moisture is gone (doesn't take so long with HG courgettes). Add cream, nutmeg and parmesan.
Alternatively, try this thread - Courgettes. With 228 replies, if it's not there it's probably not worth cooking!

I use my courgete glut up by using this recipe.
Chop a large onion, garlic and 3-4 courgettes (medium) up. Remove the seedy bit of the courgette if possible first.
Gentle fry all these ingredients for about 5 mins, then add a tin of toms (chopped or plum) and half a chicken stock cube.
Bring to the boil and then simmer very gently for 3/4hr to 1 hr.
I use this sauce a base for loads of recipes.
Pasta, meatballs, mince, as a side dish with meat, pizza.
I also freeze any if it is not used straightaway. But at least the courgettes are used and not gone to waste.DTD - Doing Tesco Daily - while I still have vouchers!0 -
Our family favourite is to slice up the courgettes and lightly fry in oilive oil and garlic. Pop into the bottom of an ovenproof dish. Top with tin of chopped tomatoes (add basil or sprinkling of italian herbs). Cover with some wholemeal breadcrumbs and some grated cheese (I keep bags of these in the freezer just for this recipe) and bake until heated through and the cheese is melted.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

For every 1lb of courgette/marrow, add 700ml stock, 1 med onion, 1 med potato, 1/4 tsp oregano, 1/4tsp rosemary, s&p..
Sweat the onion in a drop of oil, add everything else, bring to boil then simmer 15-20 mins before blitzing. Add milk if fancied, freezes well, also good cold as a chilled soup....0 -

That's more or less what I am making at the moment to use up some courgettes. I was just throwing it into the pot and hoping for the best. Great to know it makes up ok!:TOur days are happier when we give people a bit of our heart rather than a piece of our mind.

I've done the courgette lasagne, it is yummy. I grilled the courgettes before putting it all together.
Another nice thing is to stuff them.
