I like to make soup with courgettes, potatoes, an onion, some veggie stock and lots of dill.
Last night I sauteed courgettes, onion, runner beans (all home-grown) with tofu-and-rice sausages and some Chinese sauce.0 -
Oven roast in olive oil with onion, peppers, mushrooms and whatever veg you have. Make a tomato sauce with a tin or fresh toms with garlic and herbs.
Boil some pasta, mix together, hey presto.
Had it the other night, with chorizo (yummmm)0 -

I love courgettes - and this is my favourite recipe

I used to hate them when I as little but now I use them a lot. ratatouille is lovely with courgettes, aubergines, tomatoes, onion and peppers. I also eat them alot in stir frys if you like them crunchy.
Nigella's Domestic Goddess has got a recipe for corgette cake which sounds odd but apparantly its along the lines of carrot cakeish. I'm going to have a go and make it to satisfy my curiousity so I'll let people know how I get on.0 -
You can bake courgettes in the oven. Slice in half (length ways) - scoop out the seeds and fill the cavity with anything you like. I like mine with mushrooms and ham with cheese on top. Bake in over for about 30 mins...lovely as vegetable or as a veggie lunch etc0

My current fave is mashed potatoes mixed with grated cheese, grated courgettes and grated onion/spring onion...salt & pepper. Then shape into burger shapes and fry.These can be covered with stale breadcrumbs too. mmmm0

I make courgette cake on a regular basis and have yet to find anyone who doesnt like it. I tend to leave the icing off bit up to you
HERE IS THE RECIPE
60g raisins
250g courgettes(grated)
2large eggs
125ml vegetable oil
150g sugar
225g s.r.flour
1/2 tsp bicarb of soda
1/2 tsp baking powder
Preheat oven to 180 C or gas mark 4
soak the raisins to plump them up in warm water. drain the grated courgettes to remove excess water. Put eggs, oil, sugar in a bowl and beat to a cream. Add , thru a sieve, flour,bicarb and baking powder and continue to beat until combined. Now stir in courgette and drained raisins Pour the mixture into tins and bake for about 30 mins or until light bown/golden.Let the cakes stand for about 10 mins to cool in tins the turn out onto a cooling wire until cold.
The best topping I have found for this cake is
200g cream cheese
100g icing sugar
juice of 1 lime (or more to taste)
2-3 tbsp chopped pistachio nuts
Beat the cream cheese until smooth, add the icing sugar and lime juice smother the top of the cake with this then sprinkle with the pistachio nuts and enjoy!!!Hope you like itMum to 2 lovely boys who keep me busy.0 -
I had a delicious 'cupcake' type of thing in Sardinia a few years ago...seemed like a cross between a sponge and batter mixture with courgette added and when baked dredged with sugar...
There is also an easy and tasty soup...3/4 chopped courgettes, 2/3 chicken or veg stock cubes or homemade stock if you have it, add 2 pints water and cook until courgettes are soft. remove from heat, add about 300g low fat soft cheese...cheap one will do, blitz until smooth and serve immediately
Obviously you make up stock to 2 pints if using hm!Weight 08 February 86kg0 -
I recently made a lasagna with courgette. Fried up some onion and grated courgette (about 6) and garlic and added a jar of tomato pasta sauce and layered it between the lasagna sheets and made cheese sauce to go on top. It was yummyGrocery challenge July £250
