If they're very fresh and small (no more than 6" in length) than they're lovely raw: cut into ribbons with a potato peeler and dressed in a little oil and lemon juice. Leave them for an hour or two to soften.0

I make a spanish omlette type thing with them. Just slice, fry in a littlr oil with some potato (used cooked to save time) then add beaten eggs and cheese and gook until set. leave to cool and slice. this tastes gorgeous and you can chuck in almost anything.There are many things in life that will catch your eye, only a few will catch your heart. I hope this is the right place to put this! I bought a LOT of courgettes on sale a week back and hadn't even come close to using them all. One of the newspapers at the weekend suggested some courgette reciepes and my OH and I just adapted one to eat with some leftover pasta and it was YUM!
Take 1 kg courgettes, slice thinly. Take two cloves garlic, peel and crush with back of knife. Put 3 tbsp olive oil in a heavy based frying pan or saucepan and place on stove. Slowly fry courgette and garlic together with a little salt. You want to cook them without letting them brown too much until they are almost mush - you don't want them to be too moist so turn heat up if there's too much water coming from courgette in pan.
Once fully cooked, take off heat and add two tablespoons of low fat creme fraiche. Add to pasta with a little parmesan - yummy and cost next to nothing!Got £820 back from HSBC! Now entering comps like mad with the hope of winning a nice long holiday....0 -
Made this without the creme fraiche and parmesan and served it as a veg. It is really lovely.

Jamie Oliver did a Carbonara with courgettes last night on his Jamie at Home series - it looked fab and was just pancetta and courgettes fried in some oil, two egg yolks, cream, parmesan and pepper all mixed up and boiled penne pasta. He just tossed the hot pasta and pancetta mixture together and then tossed the egg mixture through this, adding a little of the pasta cooking water to make a silkly sauce. It looked wonderful!Jane

jamie oliver's new programme on last night was all about courgettes.
the recipe you mentioned in the first post is nearly identical to one he did:
fry off some cubed bacon/pancette. when it's released fat add small pieces of courgette, about the same size as the bacon so it all cooks the same.
cook any type of pasta.
mix together 2 egg yolks, a splash of cream and some grated parmesan.
once pasta is cooked mix all of the above together and add a splash of the pasta cooking water to loosen the sauce.0 -
