I make a lovely courgette and pea soup, let me know if you would like the recipie! Also I like adding them to HM pizza, spag bol or just having them as a side dish roasted with some olive oil0

I use the courgettes we grow in moussaka to replace the aubergine. It is the only way that I could get the kids to eat them. Just lay them on a baking sheet and brush with a little oil and oven roast them before layering them with your mince mix. Delish! Do agree with the poster that said to add them in spag bog sauces or pizza base sauces. That was my other little trick they didn't spot too. Go down a treat.

i had a bbq this weekend and one thing i often do is kebabs. and on the skewers this time i bought chucnks of chicken , fresh pineapple , courgette , mushrooms and peppers. everyone commented on how gorgeous they were. and the pineapple on it worked so well with all of it.0

I am a bit of a courgette virgin as no-one in my family when I was a child liked them so consequently mum didnt even get me to try them. I was asked to harvest some of the veggies at DD's school (who was I to turn down free food) and some of the items are courgettes. I saute'd some yesterday and actually liked them! I have a reasonable amount left and more to go and get in a week or so. Does anyone have any nice recipes I can try? also can they be par-boiled and frozen or anything as I could have LOADS when I next go up there!

they dont ;really freeze well as there is too much water in them. They make great soup you can freeze though, and a great loaf as well; use them in stirfries, cokked in tomato sauce, in lasagne.....
Courgette + rosemary soup:
chop up courgettes, 1 large onion and 2 cloves garlic. Saute in a little oil and salt + pepper; add enough water to cover + 2 sprigs rosemary once they are soft. simmer for 20 minutes or unil onion is cooked through and all the veg is very mushy. Then puree.

Slice, soak in milk then dip in seasoned flour and saute until crispy - lovely.;)0

One of my favourites - Spicy chicken & tomato.
takes about 30 mins - serves 2
2 tablespoons flour, 1 teaspoon chilli powder
Mix together & then coat 2 chicken breasts (cut into bite size chunks)
keep whats left of the flour/chilli for later
fry chicken for 5-6 minutes over a moderate to high heat.
& remove to a plate
Fry 1 chopped onion for 5-6 minute until softened then sprinkle in the left over flour/chilli & cook for 1 minute.
Stir in 600ml of chicken stock
add 2 chopped garlic cloves
add 2 tablespoons tomato puree
put the chicken back in the pan & bring back to boil
add 2 courgettes cut into chunks
add 5 tomatoes (quartered)
simmer for 15 to 20 mins stirring occasionally.
Serve with mashed potato.0 -

A la jamie oliver I like them diced, steamed and dressed with some kind of salad dressing. My fave is balsamic and a little olive oil but they're nice with lemony dressing as well. Best served warm - when it's hot it's watery and when it's cold it's soggy0
