I used grated courgette in the soup I made yesterday and it worked really well. I agree, I never usually bother salting them, I only do it for the burgers because they disintegrate otherwise.0 -

I have not had any success in freezing courgettes on their own. I usually fry up an onion and add the sliced courgettes then a tin of tomatoes and some herbs.
Once cooled I freeze this mixture and use it for a making a veg lasagne.
How do you freeze the courgettes without them going mushy when defrosted?

Well, 3 freezer bags full anyway. These were from my father and I simply chopped them up and put them in the freezer. I am trying to empty my freezer and havent a clue what to do with them. I know you can put them in pasta etc in a tomato sauce problem is I dont like them cooked that way. They have been frozen so come out alittle soggy once defrosted. I dont want to throw them away but cant think of anything to do with them. I have a DD who is 8 months old. Anyone got any good receipes I could use for her maybe.0

in my mary berry book is a courgette cake - think you spread it with butter so am thinking soggy wouldn't matter - let me know if want and will try and type up quickly!!0

Title says it all really. I usually grate them up and put them into spag bol. or have them in a pasta dish. Any tasty (easy
) ideas would be gratefully received. I'm having baked ham tonight, probably with potatoes. If the courgette dish wouldn't go with ham then I could have it tomorrow. I need inspiration.

Slice into rounds, dip in milk, then coat with seasoned flour, shallow fry in olive oil, not great if dieting, but yummy!0
