    mix together grated courgette and grated carrot - and grated cucumber if you like - add a bit of vinaigrette and serve as a side dish to a salad. yum :)

    Slice some courgettes up and par boil for a couple of minutes. Beat some eggs and add a little milk, some herbs and chopped fresh tomato. Tip into a frying pan and cook, finish off under the grill. A bit like an omlette but should be more solid, you can eat it hot or slice up when cold to take on a picnic or as a packed lunch.

    I'm growing courgettes too - in pots and am delighted with the crop so far.:j

    roast sliced (round or long) courgettes in a little olive oil

    fry slices gently with a little garlic

    Roasted courgettes my kids love them - I slice & coat in olive oil then put into griddle either side for a couple of mins till browned and cooked, really brings a lovley flavour out. eat on their own, layered in lasagna (yummy) or finely slice with aubergine, peppers & red onion coat all in olive oil in the griddle as before and serve with cheese/hommus in a wrap, my kids love these too.

    How about freezing the courgettes, cut into 1" slices blanch for 3 mins then freeze on trays, once frozen tip into ziplock bags (makes it easier to serve out), this way you don't have overkill on them.

    Marrows will store in a dry coolish place, wait until the stem is just starting to dry out & cut with a long stem.

    I put grated courgettes into salads and also into spag bol to bump up the veg content without the children noticing!

    NOt particularly healthy ( like most of my fave things) but once in Greece I had slices of courgette deep fried in sesame batter.

    They were absoultely gorgeous.

    I like to fritter courgettes. I just dip slices in egg, then salted flour and shallow fry them. I like them with mayonaise and chilli sauce.

    I love the stuffed courgette flowers they do in Greece, too!

    The beautiful yellow courgette flowers are at their peak too. These are one of my very favourite seasonal treats, all the more appreciated because the blooms are around for such a short time.
