a good turkish one for you:
Deep fried courgette slices, left to cool, then covered in a mix of natural yoghurt, salt and garlic. Served cold with bread.
Oddly enough they also do this with chips... cold. Everyone says ew, but even just typing this makes my mouth water.Softstuff- Officially better than 0070 -

I make mini omelettes for my son with them, Well they are more like fritters. I grate the courgettes and add sweetcorn. salt & pepper and egg then fry lightly in olive oil till set.
Must be yummy as my son eats them and he is a nightmare to feed.
TAlthough I get lonely :shocked: as a single mother there are always two smiling angels ready to give me the biggest hug in the world. Love you babies :grouphug:

Can't make the link above work but yes, courgette cake is fab and a very good way of disguising them. You can use a carrot cake recipe and just use grated courgettes instead.0

Ratatouille made with extra courgettes instead of aubergines is a good way to use them up.0

i stole this recipe from my mum :rotfl:
she calls it Courgette Bake.
slice courgettes, fry gently, (until nearly cooked)
add tin of chopped tomatoes,
sliced mushrooms,
sliced onions,
Garlic (crushed/sliced/pressed)
mixed herbs.
Let simmer for good 10 mins,
Take off heat, put into oven proof dish, cover with grated cheese, put under grill til golden.
You can serve hot as main dish with rice, or chips, bread n butter
or side dish with steak, or chicken, The list is endless.
You can also eat it cold, either on its own or with bread n butter.
It freezes well too.
