  • Courgette and brie soup (a covent garden soup kitchen recipe) Dead easy to make and tastes delicious! Freeze it and it lasts ages.

I now have 31 in the fridge and every one I know has been given courgettes. i will definitely try making courgette cake tomorrow and then I will pickle some. I have already made marrow and ginger jam ...I put in lots of extra ginger so it is lovely ( and also rhubarb and ginger jam). Also I made a batch of cucumber relish this morning to use up my extra cucumbers.
I feel so much better know janeawej had 10 acres of them...nightmare!!!

This is an interesting thread. I was thinking of growing some courgettes next year. Roughly how many courgettes would you get off one plant? My first attemp of growing anything edible is my tomato plants in hanging baskets, which are coming on nicely.

Hi, a good recipe for a glut is from
The River Cottage cook book by Hugh Fearnley what'sisname.

for 2 people , i use about 4-5 small to medium courgettes ( depends on how hungry you are !!
Slice 'em thin('ish)ly then fry in olive oil, till ssoft and squishy , brown at the edges & just beginning to break up.
Then add about 100('sh) gms of freshly grated parmesan (not the horrid pre grated stuff) and about 1-2 tbs of creme fraiche ( much nicer than cream imho).
Let it melt & bubble for a few secs then serve with pasta. Deelish!!

Also there are lots of recipes on the https://www.allotments4all.co.uk website.
    Try it.

    Re how many plants?
For 2 people, I have always had more than I need from 2-3 plants.
End up giving some away - but I really do love them.

Ive got 6 plants going and get about 4 every couple of days. I think it would be more but we've had so little rain. Im drying some in the dehydrator and have 2 bags of sliced courgette in the freezer.

    I have plenty of willpower - it's won't power I need.
  • What can I do with them?

I have loads of courgettes and marrows growing up on my allotment at the moment, and was wondering if people had some exciting recipes that I can hide them in (other half and kids not overly keen!!!)

stuffed marrow is nice stuffed with mince, raisins, pine nuts onions, garlic etc. if you have exhausted all recipes you could try and advertise them on freecycle to stop them taking over the garden, seen fennel, blackberries an more on there this year
