    Chop small, cook slowly with chopped onion and garlic until most of the moisture removed. Add cream, nutmeg, pepper, loads of parmesan, serve with spaghetti.

    I have a glut of courgettes has anybody got any recipes for them that will keep well...like pickles or preserves, thanks

    I tried this one earlier in the week and it's lovely. Never had courgette cake before to be able to compare it to anything else, but it was delicious. I alsi substituted butter for bananas, but if you do that, reduce the weight of Bananas you use

    Or making stuff to freeze - I use courgettes in lots of things, grated so the kids don't see them - things like spag bol, lasagne, chilli, shepherds pie - bulks them out cheaply.

    know the problem once grew 10 acres of them for Tesco! had loads of reject to eat!!!

    try fried courgette with garlic, put on toast is nice, grate cheese on top & grill

    Courgette instead of aubergine in mousaka

    Stuffed courgettes slice logways scoop out seeds and fill with fillings and bake

    courgette soup

    on top of pizza!

    grate or put in any dish!

    courgette in cheese sauce

    Courgette gratin

    Roast with roast vegetables

    deep fry the flowers in batter

    will try to think of some more!!

    or you could slice, blanch and freeze if all else fails you will probably be glad of them in the winter

    I make a Rattatoie(sp?) with mine.

    Fry up with onions, courgettes and peppers and then add a tin of chopped tomatoes,(or half a tin depending on quantity) A dash of Balsamic vinegar and some s&p and there you are!:D

    If the kids won't eat this(which mine won't) then blend with a hand blender and use as a pasta sauce.

    Both of these can be frozen.


    I am suppliying half our street with them at the moment, I've got six plants on the allotment!:eek:

    I have read that you can fry the courgette flowers in batter if you think you're going to have a glut.

    If I can find the recipe I'll post it.
