    From "The Taste of Health" - this is very healthy and tastes much yummier than you would think.
    Boil some spaghetti. Grate a courgette. Drain the spaghetti. Tip the grated courgette into it. (Yes, you don't need to cook it.) Mix. (I add butter but then I'm not trying to be that healthy!) Grate some cheese on top. Serve.

    Did you get that? I do like easy recipes!

    Spare a thought for me. I got some japanese eggplant. :D I'm still searching on the net what to do with them.

    I do a lovely corgette quiche & a slice. They are great. Or just steam and put a bit of butter & S & P.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    fry for a few minutes with some other veg such as mushrooms and peppers, add basil and tomato pasta sauce or passata - or a tin of tomatoes, serve with pasta and grated cheese

    Oh I just slice them and add them to stirfrys as you would mushrooms peppers etc

    You can roast them of course

    Slice thinly and have on the top of a pizza

    Use in a nut bake ( ive never done this but seen in supermarket, so it must be possible made by a person not a machine :)

    You dont need to peel them BTW, just rinse & Slice & use...

    Slice thinly then fry in oil gently until they break down into mush, then add s & p, natural yogurt or cream until you've got the right consistence for pasta sauce

    I'd definitely second that; or slice and steam them then toss them in a little extra virgin olive oil for a slightly healthier option.

    Just remembered another - not great for the waistline ;-)
    Peel into ribbons and zap in microwave (in a bowl)for about 2 mins with butter.
    This is really lush, and you can do the same with carrots. Looks really pretty on the plate - I used to serve it with trout.

    (The 'ribbons' are achieved by simply using a peeler along the length of the courgette. Gives a nice wide but thin 'ribbon')

    chocolate courgette cake
    Preparation Time: 10 mins
    Cooking Time: 45 mins

    Serves: 6

    Ingredients

    120g butter (softened)
    125ml sunflower oil
    100g caster sugar
    200g soft brown sugar
    3 eggs, beaten
    130ml milk
    350g plain flour
    2 tsp baking powder
    4 tbsp cocoa
    450g courgettes, peeled and grated finely
    1 tsp vanilla


    Instructions

    This recipe is a great way of getting children to eat more vegetables and has been a regular feature on the lunch menu at Landscove Primary School and the children seem to love it.

    1. Line a 20 x 35cm baking tray with baking paper and set the oven to 190ºC/350ºF.

    2. Mix the butter, oil and both sugars together until light and fluffy. Gradually add the eggs, one at a time and then the milk until mixed thoroughly.

    3. Sift the dry ingredients together and fold into the mixture. Stir in grated and peeled courgettes, vanilla and spoon into tin. Bake for 35 -45 minutes.

    Cut into squares whilst still warm.
