  • Hi all

    I picked up a pack of courgettes yesterday while shopping, purely because they were reduced! I need to do somthing with them and fairly soon but i havent used them much and dont particularly like them just plain and boiled.

    So any ideas peeps???

    Oh and i have about 3 or 4 large ones!

    They are nice chopped up and stir-fried.

    You could use them in a lasagne, or ratatouie, or in a pasta sauce. I sometimes make spaghetti with courgettes, slice them very finely with a sharp knife (lengthwise), fry for a few minutes, mix in with cooked pasta with a bit of white balsamic vinegar, lemon juice, and i think pine nuts (It was a Waitrose recipe).

    I'm going to try growing my own courgettes this year purely so I can make lots of these yummy treats.

    and I can particularly recommend the Carrot and Courgette salad, especially if you have some fresh herbs!

  • I use them in soups, or last night I stir fried courgette batons with a sliced red onion and some chopped garlic in a small amount of oil. Stir fry until they're just beginning to go dark golden in colour.
