Yes, it is that time of year again and I have a glut of courgettes. I would be grateful for any ideas for using them in recipies, preserves etc. I have tried freezing them sliced, but they go mushy (even when blanched first).0

Other than that a few recipes that spring to mind are ratatoullie, pasta sauces, soups, stir-frys etc.
I'm putting some in a potato curry tonight and I often slice or grate them to add to other dishes to bulk them out a bit. Hope that gives you some ideas to be going on with"An Ye Harm None, Do What Ye Will"

Here is the recipe for a wonderful courgette soup my mother always makes for me when I visit her in my native Italy:
In a saucepan, put a couple of tablespoon of extra virgin olive oil and sautee a garlic clove until it's golden. Put also a bit of parsley. Meanwhile lightly boil a few sliced courgettes. Then transfer the courgettes and water into the sauteeing pan. Add one quarter vegetable cube and about a tablespoon of tomato puree. Can add some salt if you prefer.
Cover and let simmer for about 10 minutes. The courgettes are supposed to lose all firmness and become pulp.
Experiment with quantities to your taste. I know it's tempting to use a cheaper cooking oil, but extra virgin olive oil of good quality is where it's at. Especially for health reasons...
And please do not peel the courgettes, like I have seen many people do!!

my freezer book says to cut into 1cm slices, blanch for 1 min, cool, drain and open freeze. To use either cook from frozen in boiling water or thaw in a colander so they remain firm0

I had a glut as well and someone suggested to me a method of freezing them which I have tried this year. You slice them any way you like, chunks, slices, and sprinkle them with salt and put them in a colander(sp) (with a bowl underneath) and sprinkle each layer with salt. Leave them overnight and this method withdraws the water content. I then laid them on trays and froze them and then put them in freezer bags. I haven't tried any I have frozen, but I did make a salad recipe using them after I had salted them I they tasted really nice. You might like to try this and see if it works for you.0

I've got about 23 yellow courgettes to use up, and hubby is getting bored of them. We pop one into most things we cook, but is there anything I can make with them? Pickle/chutney? Or can I freeze them (raw/blanched/cooked?)
A couple of them have turned a tad marrow-like, which we're not too keen on, but it seems a shame to just stick them on the compost.....New year, no debt! Debt free date - 02/01/07 :j :j :j0
