I'm a bit stuck at the moment with no oven, so frying or grilling is out, so I'm going to have to read back through the thread because my first choices I can't do...

hmm, it's a poser but... hows about chooping the courgettes and putting them in the micro with enogh water to cover them and a heap of lemon juice (for flavour
) and micro-ing on low until softened.
You could then use them with some tomatoes as the base for a sauce with Tuna - as you won't be able to fry off onions &c and the lemon should do nice things with the tunuPre O/S: what's a vitamin? Does it begin with the letter e?Now: I'm not eating any of that pre-made rubbish...0 -
Well... not being able to roast bake or fry for the moment I tried them in a casserole in the slow cooker. Edible but not exactly impressive so for now, until I can roast bake and fry again, I think I'll just hide them in spag bol and other saucy things.
Oh. And I'm never going to put asparagus into my slow cooker again. I have an excess of courgettes.
Apart from as a veg and on salads does anyone have any ideas as they dont freeze very well.
They are coming through thick and fast and there are only so many you can eat fresh.
Last year I only had about 2 per plant,this year I have about 6 or 7,must be the hot weather.
All help greatly appreciated.0 -
You can freeze courgettes if you slice them up and freeze them laid out flat on trays then once frozen put in plastic bags. Other than that why not let a few turn to marrows which you can then stuff or do as I do and make wine from them!0

Make a HUGE load of ratatouille (sp?) and freeze in small portions for that 'fresh from the garden taste' all year. (I have found they freeze good in sauces)0

Sorry if I'm displaying my ignorance here but do courgettes turn into marrows? I know they look alike apart from size but i've never thought of this before. Guess you learn something new everyday - or at least I do!0 -
from here, chocolate courgette cake:Chocolate courgette cake
It may seem strange adding courgettes to a cake, but you have probably tried and enjoyed carrot cake so why not give this a go. The courgettes give this cake a wonderfully moist texture.
Ingredients:
250g/9oz courgettes, coarsely grated
2 eggs
100ml/31/2floz vegetable oil
grated rind and juice 1 orange
125g/41/2oz caster sugar
225g/8oz self-raising flour
2 tablespoons cocoa powder
½ teaspoon bicarbonate of soda
½ teaspoon baking powder
50g/13/4oz ready-to-eat apricots, chopped
for the topping:
200g pack extra light cream cheese
1 tablespoon orange curd
1 tablespoon hazelnuts, toasted and chopped Photo of Chocolate courgette cake
Cooking Instructions:
Preheat the oven to 180C/350F/gas mark 4. Grease and line a 8cm, deep loose-bottomed cake tin.
Place the courgettes in a sieve and squeeze out any excess liquid.
Beat together the eggs, oil, orange rind and juice and the sugar. Sieve in the flour, cocoa powder, bicarbonate of soda and baking powder and beat to combine. Fold in the courgettes and apricots then spoon into the prepared tin. Bake for 40 minutes until risen and firm to touch. Turn out onto a cooling rack and cool. Beat together the cream cheese and the orange curd and smooth over the top. Sprinkle over the nuts.
Serves 12
