Wish you lived near me, I would buy some off you I love courgettes! I used two this evening in vegetable sweet and sour (you can chop them really finely for this and disguise them if your children don't like them). I am going to need to buy more tomorrow for a potato bake.0

I chop them finely and add to bolognese sauce/chilli con carne. Just remember to add extra stock/seasoning to make up for the watery/blandness when substituted for meat!0

If they are finel,y chopped and well cooked they aren't noticable in tomato based pasta dishes, curries, chillis etc.Nevermind the dog, beware of the kids!0

slice them in half length ways.
layer on top of each half, cheese/sliced tomatos/olives and italian herbs.
bake for 20 mins approx and serve with rice.0 -

Nigel Slater has a lovely recipe for courgette cakes, which is in his kitchen diaries book.
I often roast mine with aubergine, peppers and tomato and have it with couscous and loads of flat leaf parsley, lemon juice and olive oil.
I was trying to find a chutney recipe that I could use my glut of courgettes up with. Something tangy and spicy, however I've not found a recipe yet.0 -

I cook them and either blend them into soups or into a tomato sauce for spaghetti. Or when I make kebabs for a bbq I use cubed courgettes0
