    Slice them into coins and dip them in batter, deep fry and have with sweet chilli dipping sauce mmm

    Stirfry, stuffed courgettes, Chargrilled on top of pizza

    I put them in pretty much everything :D

  • We've had loads of corgettes this year from the garden and you do get sick of them.

    I'd cook a big ratouille, just slice them fry them with some onions mix in some chopped toms and some oregano and it's a yummy veg dish that goes with anything and freezes brilliantly.

    Veggie chilli: Chop the corgette into chunks, fry with whatever other veg you have about - I usually use onion, pepper and mushroom, add a chopped can of toms a little cinamon and some chilli powder and a can of kidney beans - this is very good froozen too - the tiny bit of cinamon just adds somethjing special and a half a glass of red wine tipped in makes it better still.

    I made meat balls using half beef and half pork mince in the food processor and just shoved a corgette in with the mix, it was completely invisible and my non veggie eating child happily ate it.

    Wish I had know that when I was shopping earlier as they were all reduced and I couldn't think how to use them up easily.

    I did buy two large aubergines, can I freeze these too? I was going to use them straight away, but if I can freeze them, even better.

    they will but they're grand for chucking into a chilli or bolognaise or basically any sort of stew or sauce.

    grate them, put them in a colander and salt them to drain some of the water out. Then cook them with an onion until soft, and mix in some flour and cook for a few minutes. Throw in some diced feta, then make them into wee cakes and fry them and you have vegetarian burgers. They're yummy like this.

    Or cook them really really slowly in a wee bit of olive oil and butter, then mix with grated parmesan and stir into pasta.
