    I have a few courgette recipes from my favourite veggie cook book
    piperade stuffed courgettes
    courgette and chick pea gratin
    Italian courgettes
    fried courgettes

    Let me know if you would like any of them. They all use basic ingredients and look easy although I havn't tried them

    Hi

    I had a glut of courgettes in the autumn and I made a huge pot of Ratatouille. Serve with grated cheese and baked potato for a tasty veggie tea or use as a vegetable with your ham and pots. I found it froze well.

    For my Ratatouille I soften chopped onions, garlic, courgettes, mixed peppers in olive oil. Add tinned tomatoes and simmer for about 30 minutes or until courgettes are soft. I think last time I did this I also added a veggie stock cube.

  • Grated courgette and carrots in herb butter done in the microwave or as Rosti with potatoes and carrots or sliced with peeler into ribbons again with carrotsand again microwaved or boiled and served with lemon juice. Griddle them in rounds with garlic this time probably without carrots!!I think this is probably also a good answer for glut of carrots!

    I know the feeling. I still have 10 pumpkins and lots of little pumpkins.
    I promised to use 1 pumpkin a week but I am struggling to hide it anymore.

    I can't even give them away!!!

    Jennybb, I'll keep the frying one in mind - can't do it today, trying to lose 3lbs post-Christmas/New Year celebrations.
    Pink, sorry I should have done a search but I was running late and had to take DS's rugby stuff to him - imagine in this weather, hence why the soup recipe is now timely.
    Suep, the Courgette & Chickpea Graton sound lovely - I'm always trying to think of ways to use chickpeas as well so I'd love the recipe.
    Grannybroon, unfortunely I've no peppers in the fridge.
    Patchwork, love the idea of a rosti - do you need to use much oil, bearing in mind the diet! I keep thinking 3lbs isn't much - when my sister is aiming at 3 stones but she'll probably reach her goal first! Still, as a start I haven't had a glass of wine since Sunday.

    I've merged the threads to keep the answer together as Pink Winged suggested. And I tried and failed to find a Delia recipe I wanted to post. BUT, LOOK!

    Courgette and pea soup


    1 small onion, peeled and finely chopped, large knob of butter or marge whatever you have, 2 courgetts, trimmed and thinly sliced, 1 large potato, peeled and chopped, 1 pint of stock, handfull of frozen or fresh peas.

    Saute the onion in the butter or marge until soft, add the courgette, potato and stock. Bring to the boil then cover and simmer until the potato is nice and soft. Add the peas bring to the boil again then reduce the heat and cook for 5 mins. Blend right down adding as much cooking liquid as you like and season to taste. This makes a lovely bright creamy thick soup
