Lots of courgettes??

  • Jamie Oliver did a Carbonara with courgettes last night on his Jamie at Home series - it looked fab and was just pancetta and courgettes fried in some oil, two egg yolks, cream, parmesan and pepper all mixed up and boiled penne pasta. He just tossed the hot pasta and pancetta mixture together and then tossed the egg mixture through this, adding a little of the pasta cooking water to make a silkly sauce. It looked wonderful!

  • Yes, that recipe of Jamie's last night is one I plan to try in the next week or so.
    Made last weeks sausage ragu the other night, it was yummy.

    I'm veggie so adapt a lot of the recipes but they still turn out really tasty and yummy!

    I've just made a version of this courgette mush to have with pasta (from The River Cottage Cookbook) -it is absolutely delicious, quite the best way of eating courgettes. I've got loads left so I'm freezing it.

    I used double cream, just a splash. Double cream (if you buy it in the half pint cartons) is a bargain ingredient for really making a dish something special. Creme fraiche is more expensive and once added to a dish like this you can't taste its distinctive flavour.
  • i steam and liquidize and put in my childrens food its the only way i can get veg down them and they have never noticed that they are there

    Hi Squeaky - you're not short of replies here are you!! Got a few ideas myself and I love courgettes. I simple courgette soup with onion I think really brings our their flavour - my fave dish tho is to slice two and fry them off in a little olive oil and place in a dish, then fry some mushrooms and add them to the dish or courgettes and top with chedder and mozzarella (or whatever cheese you like) and bake for 20 mins or so. Yummy - courgette and mushroom is a great combination. HTH

    It's lovely, but I think it's a bit salty and when I make it again I'll use half the salt.

    Oven roasted with other summer veg, eg peppers, sweet potato, tomatoes, red onion etc. Serve with white fish and new potatoes (roasted) or mix into pasta. My kids love it.

  • Hello All

    I've got 2 courgette plants in my garden and they have produced loads and loads of courgettes. Has anyone got any good and easy recipes that they could share so i can use them up. I usually steam them or roast them with a load of other veg but this is getting a bit boring and it would be nice to try something else. As you can guess I'm not much of a an adventurous cook but am willing to learn!!

    Dont know if you watched the TV programme "cook yourself thin" last night but one of the recipes they made a lasagne using courgettes sliced longways instead of sheets of lasagne it looked yummy, I am sure the recipe would be on the website for channed 4, they also had a layer of red roasted peppers as well and finished up with just one layer of pasta, I am going to give it a try.
