    It's also responsible for me putting half a stone in the last few months...:D

    hehehe -not many folks can say that the humble courgette has made them put weight on :rotfl:

    I was given a couple of courgettes today by a colleague who grows their own.

    I thought I'd do a cream and cheese courgette bake as I have some cream and cheese that need using up.

    I've only got a bit of cream though - not even 100ml.

    I was thinking maybe to add a bit of milk (maybe 100ml?) and an egg yolk to pad it out a bit?? And then use small dish so there isn't much surface area to cover?

    Would a cream/egg/milk mix work? I'd just then layer the veg and cheese together and bake.

    If I were you I'd make cheese sauce with the cream added ;)

    You won't need much cream because courgettes are quite wet by themselves. Suggest to cube them and fry them a bit with minced onion (and garlic if you like it) until soft. Mix them up with the grated cheese, and transfer to an oven dish. Beat an egg with a little cream and pour over the top - you can sprinkle finally with some reserved cheese, but this is not purely necessary. Bake in medium oven for say 25 minutes.

    OH has just asked if his son can come back for his dinner later after football practice - let's hope the recipe works, I don't like giving other people (other than my OH!) untried out, bodged together recipes!!

    It can't go very much wrong. We grow courgettes every year and eat them a lot this season - they're very forgiving! I forgot to mention in above recipe to season with salt & pepper, but I am sure you would have done that anyway. I make this quite a lot with mince instead of grated cheese, and my OH is quite keen on it. He is allowed to dollop it with HM ketchup.

    Thinking about it now, there is also a very nice pasta sauce you can make with just courgettes, a clove of garlic, a tablespoon of two of cream and some parmesan. Let me know if you'd like it if you have any courgettes (and cream) left over after today.
