Hi elly,
There are loads of ideas that should help on this earlier thread so I've added your post to it to keep the suggestions together.

I like frying them on a grill pan, then squirting lemon juice and sprinkling parmesan cheese on top. Then I eat them with crackers. Yum. I just love courgettes.GC March Wk1 £28.72/£30 Wk2 £28.4/£29

Hi everyone, Ive had three courgettes in my veg box this week and I dont have a clue what to do with them.
Whenever I have eaten them they have been soggy so it put me off them.
Can you freeze them?
Any ideas will be appreciated.
Thanks0 -
hi cathchat,
if it's the cooked texture you're not fond of, do you like it raw, cut into strips and dipped into HM houmous?
I do :rotfl::o

Fry them in oil with salt and a but of chilli powder - not for too long and they will stay fairly crispy- delicious!!Keep the Faith:cool:0

Add them to pasta sauces after the onions are cooked, give them 3-5 mins cooking then add the tomato sauce. Make sure they are sliced in 5mm slices.
[Don't freeze them, they will go even more soggy].0 -
Hi CathChat,
I've added your thread to an earlier one that should help you to use your courgettes. They can be frozen but because of their high water content they tend to be a bit mushy once defrosted so best used in soups, casseroles etc.

I make a pasta sauce with courgettes...
Cut up courgettes, cook with a little butter until soft.
Add, about a table spoon of creme fraiche, per courgette to the pan, then blend the mixture.
Season to taste.
Mix with freshly cooked pasta.
If you make a large batch, it does freeze well0
