    I use courgettes in lots of things - mostly pasta related meals! - but something else that's nice is small cubes of courgette stir fried for a few minutes, mixed into cottage cheese, and poured on to a baked sweet potato. Might sound weird, but it's so good! : )

    Oh I'm glad you asked that question I have 9 courgette plants currently thriving in my garden and whilst we do eat alot, in pasta sauces mainly, I'm told they can be prolific producers so any ideas as to how I can use up the many I will hopefully have soon would be gratefully received! To OP I love courgettes cut into chunks and roasted in the oven with a little olive oil and garlic! Yummy

    This soup is lush, it's the reason I grow [and from this year, will have a strain of my own self pollenated and seed saved] yellow courgettes.

    Your combined wisdom is needed:D
    I've got an allotment and my 18 courgette plants are all going mad, so it looks like I'm going to have quite a few courgettes. I just wondered if there was any way of keeping them, whether it be pickling or something else? I presume I can't freeze them as they've got such a high water content.
    Any help or advice much appreciated:T

    If you make them into ratatouille it will freeze just fine.

    I would imagine someone will come along with a delicious courgette soup recipe at the very least. Courgettes aren't a favourite of mine per se so I can't offer too many suggestions. That said, I once had a minted courgette salad at a BBQ place in Jersey which was utterly delish!

    It's worth googling there's some quite nice sounding courgette (and pineapple or ginger) jams out there, and even courgette and carrot cake!

    I have a chocolate courgette cake recipe but I need to ask the author if it's ok to post it here. Having said that, I'm sure you could sub it in a carrot or banana cake recipe.

    Also, chutney is the other obvious choice.

    courgettes freeze fine, i freeze them all the time, granted they are best frozen into a dish of some kind rather than frozen on thier own.

    I know mrsMcawber has got a recipe for courgette teacakes she keeps prattling on about on her blog, i plan to ask her for the recipe so she minght be a good person to harrass.

    18 courgette plants wow i have 7 and i thought i had to many haha.

    Would second the ratatouille idea. That's what I did last year. I have to say that 18 courgette plants is an awful lot - how many in your family? We have 5 courgette plants on our allotment and we are a family of four!
