my favourite is in the oven with gravy, a dollop of red wine, finely sliced onion and sliced mushrooms. Not very different or exciting but easy to cook! Oh and oven chips - par boil and then bung in oven as well in a roasting tin with a couple of teaspoons of olive oil.

Thanks for this - we have got sausgaes for dinner tonight and I've got onions and mushrooms to use up. Any excuse to open a bottle or red, really! :D

Fry onions peppers and garlic, add grilled sausages sliced thickly add a tin of chopped tomatos, a tin of mixed beans, and some mixed herbs and paprika to taste, we usually have this with pasta, but it goes well with rice or potatos as well. I do normally use home soaked cooked mixed beans, but if I forget, theres normally a tin of something in the cupboard to use as a replacement.
We're having toad in the hole tonight yummy.

If you are following the snorkers and mash route, then perk up your mash by cooking a couple of cloves of garlic with the spuds and mashing them in with butter, creme fraiche (or milk or cream - what ever you prefer) and a teaspoon or so of grain mustard. It's my hubbies absolute fave and if I do 'normal' mash now he looks most put out ;)

I sometimes add in some mashed carrot too, but not too much cos it can sometimes make the mash a bit wet.

This mash goes brilliantly with a nice plain snorker, and equally well with Cumberlands and Linc's.
It is also FAB with sausage casserole (snorkers, onion, celery, tinned toms, herbs like italian seasoning or thyme and veg or chicken stock cube - thicken with cornflour if desired)

How about quick cassoulet. Get a variety of tinned beans (red kidney, barlotti, canelleni etc) empty them into an oven proof dish with a tin of tomatoes, some stock, diced onion, carrot and celery and plenty of herbs such as sage, rosemary, thyme, parsley. Then add some meat. put in a hot oven for about an hour. I like using thick tasty sausages which I cook ontop of the cassoulet and then at the end I chop them through it before serving. You can serve it with garlic bread and some kind of potato.

  • Hiya. Saw this and had to share my cider sausage recipe. It's my favourite in the whole world.

Brown sausages (8) and put to one side
Chop onion into rings and fry with carrots, or pepper or whatever veg you need to use up
Add plain flour and stir well for a couple of minutes
    Add 100ml beef stock
Add 200ml dry cider (or more depends on how long you want to leave it)
    Return the sausages
Stir everything and season and add a bouquet garni,

Cover and simmer for about 45 mins.

It's round about that. The cider makes the gravy taste incredible (and all the alcohol boils away of course).

I serve with cheesy mash. Blimy, I'm drooling thinking about it!
