    How about sausage pie.

Cook sausages then cut in half length ways, place in a oven dish.Layer some fried onions and a tin of chopped tomatoes on top of sausages and then cover it all with mashed potatoes and cook until browned.

I do a cheat's cassoulet, involving a tin of baked beans, a tin of plum tomatoes, onions, garlic, parsley, chicken thighs, bacon or gammon and sausages. NB you can leave out any or all of the meat. If there's a veggie coming, I use mushrooms.

Grill the chicken, bacon and the sausages.
Chop onions and garlic and heat in a little olive oil.
When transparent, add the beans and stir.
Then add the tomatoes and leave to simmer.
When the chicken and sausages are cooked, add to the mix.
Garnish with parsley or basil or chives.
    Serve with French bread.
    Context is all.

Toad in the Hole is delish, I normally serve it with Jacket spud and beans or loads of veg and onion gravy.

I got some fab ideas from there :)
  • I often skin the sausages and mix them with a made up packet of sage and onion stuffing mix and bake it in a loaf tin. It is lovely cold and sliced with salads, or on sandwiches. My kids love it.

As a change in the casserole - add fusilli pasta twirls to it and you have no need for potatoes or chips and it makes it go further too.

I put my finger through the packaging of some frozen pork sausages last night, so rather then let them get frostbite, I've defrosted them for tea!

What can I do with them?

I'd like sausage, egg and chips but OH doesn't like "breakfast food for tea"

    any ideas?
