    Sausages and lentils (an Italian dish)

    Cook 2 cups of brown or green lentils (Not the orange ones, they go all pappy) in plenty of water until soft (or you can use tinned lentils but this is not very OS!). Drain and set aside.

    Make holes in sausage skins so the fat drains away and brown them under the grill or in a pan with a bit of water. Discard sausage fat (bad for the arteries even if very tasty!) Cut them in chunks and set aside.

    Chop 1 or 2 onions (I like a lot of onion in this!), fry in some olive oil until gloden brown, add two tins of chopped tomatoes, lentils and sausage, add 3-4 broken bay leaves and let it simmer for 20-30 minutes, stirring often.

    Season to taste with salt and pepper, when ready add a large handful of chopped fresh parsley.

    This is very good served with polenta (yellow cornmeal porridge).

    Sausage and rice bake

    Mix about 6oz of rice with some chopped onion, chopped apple, a tin of chopped tomatoes, some mixed dried herbs and a bit of stock in an oven proof dish. Arrange the sausages on top and bake for about 45 mins until the rice and bangers are cooked

    cat and TM yum they both sound fab too ! need to get me some green lentils,ive only got red

    We often make pasta and sausages:
    - fry a chopped onion, add chopped sausages
    - add tinned toms, tom puree
    -cook for long time
    - cook pasta in separate dish
    - add some cream to sauce
    - mix pasta and sauce, add parmesan and chopped parsely

    Another nice one is a sausage casserole with chopped leeks and apple quarters in it.

    Sausages cooked in a little honey are delicious. This is especially nice on mini sausages on sticks for party food.

    Had pork & leek sausages last night and they were delicious. I made a green salad of spinach leaves, rocket and watercress which I gave a generous helping of olive oil to and also mixed in 2 spring onions and tiny baby tomatoes cut in half, along with some sunflower and pumpkin seeds, also served with cous cous and root mash.

    It went down a treat - everybody loved it!

    I remember a version of this where ketchup was spread between the meat and the pastry
