Tea loaf recipe please!

Hello all.....I've cut out the old booze for 2 months (needed a big detox!)-so usually have some sweet/carb cravings....trying not to buy lovely 'tesco finest' shortbreads & cookies & have been making my own 'tea' breads, malt loaf type breads (example here http://joshuahart.co.uk/2009/06/12/all-bran-loaf/comment-page-1/#comment-602 )...using SPLENDA instead of sugar & I've been using either wholegrain flour OR s/raising flour with a few tablespoons raw wheat bran added....+ some fruit!
As it takes up to 1 1/2hrs at say 150 in the oven I wondered if any of you good folk had any microwave versions? In my younger days I used to do a lot of microwave cooking & I know that loaves, etc can be cooked but don't brown (after all if a dark 'cake'' doesn't really matter)...it would be quicker & I'm sure save on my elecric bills! Any ideas for low fat malt loafy/tea loafy style breads? Or indeed how to convert conventional recipes? Thanks for any help in advance (!)0 -
I posted one on another thread about fat free cooking..... I know there's no fat or sugar but go with it... it's yummy!! (and only 4 syns a slice on Slimming World)
1lb fruit (bag of smart price!!)
1 cup cold black tea (but I can't wait sometimes, so use it warm to no detriment)
1tsp mixed spice
1 egg
6oz flour
Soak fruit in tea for... well 3hours, overnight (20 mins works!!) Add rest of ingredients and stir well, put in greased loaf tin, cook on gas 4, 180 for about 1hr.. till knife comes out clean.
Yum!!!!!
You can, for a change and speed of eating cook it in a bun tin... comes out like rock ish cakes

Zippychick-CHEERS! Batch cooking in oven a good idea but freezer I'm afraid full of other batch cooked soups/casseroles (good old slow cooker!)....will check the links out. Thanks again!0

Well after a bit of experimentation I've come up with the PERFECT low-fat/sugar free (use splenda!)..high fibre tea loaf! EIGHT minutes to cook-3 mins to make!

ok...heres the recipe! Total calories for the whole BIG (over 700 gms!) loaf is 1200-1300 cals-depending on what fruit you use!
Also bear in mind my microwave is old & 800 watts-adjust accordingly!- 100 grams all bran (asda do thier own brand at £1!)-OR 100 gms cheap own brand bran flakes
- 18 grams splenda (tesco have their own brad using sucralose-much better flavour than aspartene/saccarin at £1-20)
- 100 grams sultanas (raisins or other dried fruit @ 100gm could be used)
- 150 grams stoneground wholemeal flour
- 2 teaspoons baking powder
- good pinch salt
- generous sprinkle of cinammon (or could use ginger??-never tried that!)
- 1 large mashed ripe bananna
- 250 ml strong tea (made with 2 tea bags)
- 1 apple-finely diced
Bake in a silicone or microwave proof bread tin for EIGHT minutes. Cooked when middle is still a bit moist & has some 'give'. Leave to cool-wrap in foil to store. keeps for a few days. When older/dryer can be toasted! As long as weights are same ANY flour, fruit can be used. Super low cal & high fibre-about 1.8 cals per gramme! Enjoy!0 -

Bara Brith is a Welsh teabread that has dried fruit and tea in it.
I have this recipe (by Mary Berry):
175g currants
175g sultanas
225g light muscovado sugar
300ml strong hot tea
275g SR flour
1 large beaten egg
Measure fruit and sugar into a bowl,pour over the hot tea,cover and leave overnight.
Pre-heat oven to 150c.Lightly grease a 900g loaf tin and line base.
Stir the flour and egg into the fruit mixture,mix thoroughly,then turn into prepared tin and level surface.
Bake in pre-heated oven for about 90 minutes,or until well risen and firm to touch.Leave to cool in tin for 10 minutes,then turn out,and let cool on a wire rack.Serve sliced and buttered.
