...or banana muffins? I have some bananas that are nicely ripened and would love to try and make a banana cake as it is yummy.
Last week I attempted to make raspberry and white chocolate muffins. Surprisingly they came out edible even though I estimated all the ingredients cos I haven't bought myself any scales yet.

Made these a couple of weeks ago & they were very scrummy & foolproof to make!
225g self raising flour
100g butter
85g castor sugar
2 medium eggs, lightly beaten
1 tsp baking powder
1 tsp ground cinnamon
170ml milk
a pinch of salt
grated zest of 1 lemon
2 bananas
Heat oven to 200°C or Gas Mark 6. Grease 12 muffin tins with butter or place 12 muffin cake cases in a tin.
Melt the butter and leave to cool.
Sieve the flour, baking powder, cinnamon and salt into a large bowl. Stir in the sugar and lemon zest.
Mash the banana with a fork and add to the flour. Lightly beat the melted butter and milk together and add to the flour.
Add the eggs and stir until just mixed, do not over beat.
Divide the mixture between the tins or cases.
Bake in the centre of the oven for 25 minutes, leave in the tins for 5 minutes then place on a wire rack to cool.0 -

I'm a very busy squeaky, trying to make some semblance of order in the building site that is my home; about to hide some beetroot, which I don't much care for, in a cake; waiting in to give some stuff away via freecycle (and took on the job as a moderator in my local group eek) so that I can get away for the second time today and do some shopping; and... trying my very best to index more threads for the MEGA Index down at the back end than you lot are are busy creating up at the front.

I used to make it without any nuts though for my fussy family :rolleyes:
