Post #90 by catznine - made it yesterday and it's lovely.
Just used up the 4 baby bananas which were smelling all pear droppy and almost walking out of the door!
Was an ounce or so under on the butter and a couple of ounces short on the flour.....so I've experimented and added about 2 ounces of SR flour that I found lurking to the mix........it's inthe oven now!!! (even if its a disaster, I was going to chuck the bananas anyway!)
I'll use the over ripe pears from my other thread in something tomorrow night......."Stay Wonky":D

This is a fat free one i make for DS, found it in the recipe collection, but cant find it now, but this is the one i wrote down!!!!
165g sugar,
1 egg,
150g s/r flour,
3 ripe bananas,
(can also add chopped up mars or snickers bar)
Mix all ingredients together, pour into a loaf tin and cook for 30 mins, 180C0 -
Yummmm. I made a gorgeous Banana, Walnut & Choc Chip cake from here a few weeks ago (think it was posted by Queeny?!!) - it was soooooo nice. Although I am reluctant to make it again as I will scoff the whole thing :0) - could eat it right now infact. Yummo!!.0

Have 3 very ripe bananas at home I was hoping to find a purpose for... I only eat them when they are just turning from green to yellow and OH would only eat them if they were in cake form I think

Bought some bananas in bulk but have half a dozen looking the worse for wear, thought of making banana sponge cake with them but not sure on what point I add the bananas to the flour eggs and sugar and how long to bake for. Anyone have any tips/a good recipe? Thanks MSErs0

That sounds sensible. If I had any sense I'd be in bed....I have to get up early tomorrow to cook a high protein breakfast for my poor daughter who has her first GCSE tomorrow
