  • Hi,
    does anyone have a recipe for banana bread/loaf. I bought 15 bananas for 99p in Morrisons the other day - and i still have a few to use up.

    I have looked on the recipe index but couldn't find anything

    We all enjoy this one in our house,
    165g sugar
    1 egg
    150g s/r flour
    3 ripe bananas
    chopped up mars bar (optional)
    Mix all ingredients, bake 180 C for 30 mins

    Its lovely with or without the mars bar, got it off a thread on this web site, not sure where it is now tho!!!

    Banana Tea Bread from the Bero book

    8oz self raising flour
    1/4 tsp bicarbonate of soda
    pinch salt
    3oz butter
    6oz sugar
    2 eggs, beaten
    1lb bananas (weighed with skin) peeled and mashed
    4oz walnuts/dried fruit (optional)

    Heat oven to 180c/350f,/gas 4, and line the base of 2lb loaf tin. Mix together flour, bicarb and salt.
    Cream butter and sugar till pale and fluffy, add the eggs a little at a time alternately with a little flour.
    Stir in the remaining flour, bananas and nuts/fruit and put into tim. Bake for about one to one and a quarter hours and cool on a wire rack.

    :wave: Hi there,Graham and welcome to the board.
    I've got a good banana muffin recipe which can be made in a cake or loaf tin if you give it a bit longer in the oven.

    Btw, you can freeze bananas for baking .Just put them unpeeled in a bag in the freezer.I always do this with over-ripe ones-perfect for baking.

    Banana Muffins/Cake/loaf

    Put in a large mixing bowl
    10 oz plain flour
    1 tsp baking powder
    1 tsp bicarb
    1/2 tsp salt

    In another bowl mash 3 bananas(the riper,the better)
    Add
    4 oz sugar
    1 egg,beaten with a fork(I never use the egg as dd allergic-you can replace it with 3-4 tbsp of milk)
    2-3 fl oz milk
    3 fl oz vegetable oil or melted butter

    Add the liquid ingredients to the dry and combine thoroughly,BUT be careful not to over-beat,on no account use an electric beater,the mixture should look quite lumpy.

    Line a muffin tin with muffin cases,or grease the cups well and fill about 3/4 of the way up.Bake at 190-200c for about 25 mins.
    If you want to make a cake pour mixture into a greased 1lb loaf tin or a 7 inch round cake tin and bake for about 35 mins.check for doneness with a skewer-if it comes out of the centre of the cake clean it's cooked.
    I usually double up the mixture,so I'm not entirely sure about the tin sizes ,I'm afraid.

    You can obviously add chopped nuts,raisins,dried apricots or choc chips.Some mixed spice is nice too. :) HTH

    Hi there

    I use the Bero recipe - it's really quick and easy (i use a little less sugar tho). I also stick any ripe bananas in the freezer in their skins to thaw when I want to make a loaf. Works a treat!

    Made these a couple of weeks ago & they were very scrummy & foolproof to make!

    225g self raising flour
    100g butter
    85g castor sugar
    2 medium eggs, lightly beaten
    1 tsp baking powder
    1 tsp ground cinnamon
    170ml milk
    a pinch of salt
    grated zest of 1 lemon
    2 bananas



    Heat oven to 200°C or Gas Mark 6. Grease 12 muffin tins with butter or place 12 muffin cake cases in a tin.
    Melt the butter and leave to cool.

    Sieve the flour, baking powder, cinnamon and salt into a large bowl. Stir in the sugar and lemon zest.

    Mash the banana with a fork and add to the flour. Lightly beat the melted butter and milk together and add to the flour.

    Add the eggs and stir until just mixed, do not over beat.

    Divide the mixture between the tins or cases.

    Bake in the centre of the oven for 25 minutes, leave in the tins for 5 minutes then place on a wire rack to cool.


    Just made these and they taste really really good! However, once out of the tin and onto the cooling rack the rounded top flattened. :confused: Does anyone know why or what I can do to prevent it??
