    Good tip we found on here a while back, wrap the peeled bananas in clingfilm, and put them in the freezer, they come out like banana ice cream!!!! My DD loves them!!!!
  • Made some banana bread today and some flapjacks (added some peanuts, mixed spice and cinnamon as well to the ingredients - they're tasty.)
    Will try freezing the peeled bananas next time - they sound nice to eat outside on a hot day (when we get another one!)

    I use this one

    8oz SR Flour
    1/2 tsp salt
    4oz Margarine
    6oz Brown Sugar
    3oz Rasins
    2 Ripe bananas
    1 Egg
    3 tbsp milk

    Pre heat oven to Gas mark 3
    Grease and line loaf tin
    Rub together flour and margarine
    Add sugar and rasins
    Mash the bananas and add to mixture
    Beat the egg and add milk - add to mixture, mixing well
    Add mixture to tin and level with a spoon
    Bake for 1 1/2 hours
    It's nice to be nutty but's more important to be nice

    Hello,
    Im quite new to this forum, though I have been looking in!
    I am going through what hubby calls a "Nigella" phase and cooking everything from scratch.Today I made a pot of potato and leek soup( froze half of it for next time), made risotto at the weekend etc!
    I would love a recipe for banana loaf, Ive had a look online but not really seen anything that grabbed me...do any of you guys have a favourite recipe you could share with me?

    Welcome. Do you have a breadmaker? If so, I do have a nice recipe which I found some time ago on this forum.

    Full marks to you for that Carol. I'm currently getting much more into starting from scratch myself.
    However, if you ever feel like a lazy day I suggest the following BM recipe. It is fantastic and sooooo easy and everyone who tastes it loves it.
    I'm afraid I don't know how to insert a link to a thread but if you do a search and type in Panasonic BM Banana Bread, you should find the recipe.
    Just think, this would leave you more time for other hands on experiments.

    Banana loaf,

    165g sugar,
    1 egg,
    150g s/r flour,
    3 ripe bananas.

    Mix all ingredients together, pour into a loaf tin and bake at 180 C for about 30 minutes.

    Try the recipes on the Fyffes Bananas website. Soss I don't know the link but the cake is very, very moreish - be warned!

  • I love banana cake too. My mum used to make one in the microwave but sadly she's been gone a few years so I can't ask her the recipe. Does anyone know of one? (I'd need to doctor it in any case as I am gluten free!)
