    Had a few very ripe bananas which no one would eat so i popped on here to find a simple banana cake/bread recipe.

    Tried this one today and it got thumbs up all around, OH partically likes it covered in custard, its just his sort of dessert and perfect for this time of year.:D

    This is the receipe I use which is always popular in our house with or without custard:

    225g/8oz plain flour
    2tsp baking powder
    100g/31/2 oz butter

    Rub these together (I use magimix for this part)

    Then stir in:

    75g/2 3/4 oz caster sugar
    125g/4 1/2 oz dates or sultanas or dried apricots
    2 mashed bananas
    2 eggs
    2tbsp clear honey

    pour into lined 2lb loaf tin and bake for 1 hour at 160 c

    I cook this in the AGA - top oven for 20 minutes using plain shelf to shield then move to lower oven ontop of plain shelf until cooked approx 45-60 mins

    We love banana bread....Dd, likes it buttered, ds1 likes it as it comes and ds2 likes it with custard.

    This is the recipe that I use:

    Makes two loaves...we usually eat one and freeze one.

    6oz margarine (I use flora)
    9oz caster sugar
    3 eggs
    4 mashed bananas (the riper the better)
    12oz sr flour
    1 1/2 teaspoons of baking powder
    3 tablespoons of milk

    Pre-heat the oven to 180 degrees and grease and line (with greaseproof paper) two 2lb tins.

    Cream the margarine and sugar together, then add the eggs and mashed bananas.

    Next add the flour, baking powder and milk and fold into the creamed mix.

    Pour the mixture into the lined tins and bake in the centre of the oven for about 45 minutes or until they are a light brown colour.

    Turn them out onto a baking rack, remove the greaseproof paper and leave to cool.

    Hello Carol,

    The one I can't get enough of I've been making for years (can't remember where it's from) and is dead easy to make:

    100g soft marg
    175g light muscavado sugar
    2 ripe bananas
    2 eggs
    225g self raising flour
    1 tsp baking pwd
    50g chopped walnuts
    2 tbsp Milk

    Cream together marg and sugar. Mash banana and mix in well. Beat in eggs. Gently fold in sifted flour and baking powder and then stir in the walnuts and the mild.
    Put into a 1Kg / 2lb lined & greased loaf tin bake at 180ºC for 1 hour.

    It's lovely and moist but still lovely with a dollop of butter.

    Big thanks to everyone for the recipies...tried Catowens this morning and it is superbbbbbb! hubby and I have had a couple of slices with a mug of tea...delishh!

    Hi boomdocker...i used a 2lb one, i think,(the standard ones you get in bakery sets.)And it rose up in the middle and is soooooo yummmmmmy lol. What am i like eh..was gonna take a picture of it and frame it!

    My mouth is watering! I ordered some bananas from Sainsburys on Thursday to make this bread with but when they came they were too green! Im still waiting for them to ripen now so that I can try this recipe!

    Is this recipe suppose to have a stoggy texture to it? Ive tried making banana muffins before and they seemed to have the same texture. I dont know if I am doing something wrong or they are suppose to be like this. Can anyone advise????
