I know that most cake recipes tell you to take out some flour if you are adding cocoa, but I don't bother, so if I'm making the chocolate one I add a bit more liquid (usually the orange juice or milk) so that all the dry ingredients are mixed in. I often chop up a couple of bars of chocolate (200g in total) and mix that in too - nice if you are making the small cakes.0 -
I've been patiently waiting for my bananas to (over) ripen as I really want to make a banana loaf. I've for the time to make it today and really fancy doing some baking - they are a good yellow and ripe but just not over-ripe and all spotty like most of the recipes call for.
Do you think I'll get away with it?
I've read that you can bake them in the oven before hand, I'm not sure if this is really 'ripening' but would it help?:

You'll be fine using them but you may have to just add a little extra liquid as the mixture won't be as wet as usual that's all.I just add a splash of milk if needed HTH D0

Thank you! It's just come out of the oven, hope it's cooked properly as it was quite a moist mixture. I did bake some bananas first out of curiosity, they went black very quickly and tasted divine straight from the skin too!0

using just ripe bananas is fine - its just that the taste isn't quite as strong as overripe ones and they aren't as 'mushy', but I just use an extra banana and a little milk.
Hope your banana bread is all you hoped for - I love mine spread with butter and jam. but its nice to eat plain too!

last time i made a banana loaf my bananas would not ripen sufficently to brown and spotty. i mixed some brown sugar into the mashes mix - seemed to work as bananas get sweeter as they get riper. i was making the loaf for church and making individual cupcakes with the kids a church the following day (i had agreed to do somthing with the kids and wanted samples for the adults to try). as the oven was cooling from making the loaf i put the rest of the bananas on a tray in the cooling oven for about 8 mins and they ripened a treat.Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0

ive merged this with our banana bread thread. When they go brown and spotty, freeze in their skins for your next loaf
